Yield 9

Number Of Ingredients 13

4 red potatoes, cubed
3 cloves garlic, peeled
¼ cup butter, melted
½ cup fat free milk
2 tablespoons heavy cream
½ teaspoon salt
¼ cup grated Parmesan cheese
2 cups shredded cooked chicken
1 (15.25 ounce) can sweet yellow corn, drained
1 (8 ounce) package corn bread mix (such as Jiffy®)
¼ cup white sugar
1 egg
1 tablespoon butter

Steps:

  • Place the potatoes and garlic into a large pot and cover with salted water. Bring to a boil over high heat, then reduce heat to medium-low, cover, and simmer until tender, about 20 minutes. • Preheat an oven to 375 degrees F (190 degrees C).
  • Mix the chicken and corn in a 9x13-inch baking dish, then spread the mixture into an even layer. Spread the mashed potatoes on top; set aside. Combine the cornbread mix, sugar, and egg in a bowl. Spread the mixture over the mashed potatoes.

Tips:

  • Choose the right potatoes: Redskin potatoes are the best choice for this recipe, as they have a thin skin that crisps up nicely and a creamy interior. If you can't find Redskin potatoes, you can also use Yukon Gold or fingerling potatoes.
  • Wash the potatoes thoroughly: Scrub the potatoes with a vegetable brush to remove any dirt or debris. This will help the potatoes cook evenly and prevent them from sticking to the pan.
  • Cut the potatoes into even-sized pieces: This will help them cook evenly. If the potatoes are different sizes, the smaller ones will cook faster than the larger ones.
  • Season the potatoes liberally: Use a combination of salt, pepper, garlic powder, and paprika to season the potatoes. You can also add other herbs and spices, such as rosemary, thyme, or oregano.
  • Roast the potatoes at a high temperature: This will help them get crispy on the outside and fluffy on the inside. Preheat your oven to 425 degrees Fahrenheit before roasting the potatoes.
  • Toss the potatoes halfway through cooking: This will help them cook evenly and prevent them from sticking to the pan.
  • Serve the potatoes hot: Roasted Redskin potatoes are best served hot out of the oven. They can be served as a side dish or as a main course.

Conclusion:

Roasted Redskin potatoes are a delicious and easy-to-make side dish that can be enjoyed by people of all ages. They are perfect for a weeknight meal or a special occasion. With just a few simple ingredients and a little bit of time, you can create a dish that is sure to impress your family and friends.
