I have added black-eyed pea relish, jalapeños, and even pear relish on occasions, depending on my mood and what I had on hand. This is a fun dish and people of all ages love it.

REDNECK CAVIAR

This dip is really good with Tostitos scoops or your favorite cracker. My son didn't like any of these ingredients until he tried this combination. You may also substitute black beans for a can of pinto beans. (It is also called Cowboy Caviar or Texas Caviar).

3 cups fresh salsa (Sam's or Costco carry large containers)
1/2 cup Italian dressing
1/4 cup fresh cilantro, chopped and lightly packed
Tortilla or baked pita chips

Tips:

  • Choose ripe, fresh tomatoes: The quality of the tomatoes will greatly impact the flavor of your redneck caviar. Look for ripe, juicy tomatoes that are free of blemishes.
  • Use a sharp knife: A sharp knife will help you dice the tomatoes and onions evenly and efficiently.
  • Don't over-chop the vegetables: You want the vegetables to retain some of their texture, so don't chop them too finely.
  • Use a variety of onions: Red onions, white onions, and shallots all add different flavors to redneck caviar. Experiment with different combinations to find your favorite.
  • Don't skimp on the herbs: Herbs like basil, chives, and parsley add a lot of flavor to redneck caviar. Use fresh herbs whenever possible.
  • Use a good quality olive oil: The olive oil you use will also impact the flavor of your redneck caviar. Choose a good quality olive oil that has a fruity, peppery flavor.
  • Let the flavors meld: Redneck caviar is best when the flavors have had a chance to meld together. Let it sit in the refrigerator for at least 30 minutes before serving.
