RED WINE STEAK MARINADE

Red Wine Steak Marinade image

This easy marinade recipe makes the best, most flavorful steaks with a sublte hint of red wine!

Provided by Julie Evink

Categories     Main Course

Time 2h22m

Number Of Ingredients 8

1 c. red wine
1 Tbsp soy sauce
¼ c. olive oil
1 tsp kosher salt
1 tsp ground black pepper
2 tsp minced garlic
1 tsp onion powder
1 ½ lb steaks ((I love Sirloin, Ribeye or New York Cut Steaks!))

Steps:

  • In a small bowl whisk all the ingredients except the steak.
  • Add steaks to a resealable zip lock bag or large bowl and pour the marinade over the top of the steak. Squeeze as much air out of bag as possible and seal.
  • Marinate for at least 2 hours or overnight.
  • To make steaks in skillet: Turn heat to high and let preheat a few minutes until skillet is hot. Place steaks in skillet. Cook each side for 3 minutes. Reduce heat to medium-high. Cook steaks to the desired doneness, flipping as needed. It will take about 10 minutes depending on thickness of steaks. I prefer mine to be about 145 degrees which is medium.
  • To make steaks on the grill. Preheat grill to medium-high. Place steaks on grill. Cook 4-6 minutes per side or until the internal temperature reaches at least 145 degrees F for medium.
  • Let steaks rest 3 minutes before serving.

PAN-SEARED STEAK WITH RED WINE SAUCE

Pan-Seared Steak With Red Wine Sauce image

You can use any cut of steak, either bone-in or boneless, to make this classic French bistro dish. Steaks cut from the tenderloin, such as filet mignon, are the most tender pieces of beef, though they lack the assertively beefy chew of sirloins and rib steaks. Adding brandy to the pan sauce not only contributes flavor; its high alcohol content and acidity help extract flavor from the pan drippings. However, if setting it on fire makes you nervous, skip that step and let the brandy simmer down for an extra few minutes to cook off most of the alcohol. Make sure to open a good bottle of red wine to use in the sauce here, preferably one that you're happy to finish off with dinner. This recipe is part of The New Essentials of French Cooking, a guide to definitive dishes every modern cook should master. Buy the book.

Time 35m

Yield 4 servings

Number Of Ingredients 11

Kosher salt, as needed
Freshly ground black pepper, as needed
1 1/2 pounds boneless steak, or 1 3/4 pounds bone-in steak (1 1/2 inches thick)
2 shallots
2 1/2 tablespoons unsalted butter
1/2 teaspoon neutral oil, such as grapeseed
2 tablespoons good brandy, preferably Cognac
1/3 cup dry red wine
1/3 cup beef or chicken stock, preferably homemade
1 tablespoon chopped chives
Watercress, for serving

Steps:

  • Generously sprinkle salt and pepper all over steaks, then let steaks rest uncovered for 15 minutes at room temperature. Meanwhile, mince the shallots.
  • Melt 1/2 tablespoon butter and the oil in a large skillet over medium-high heat until almost smoking. Add steaks and cook until done to taste, about 3 to 4 minutes per side for rare and a little longer for medium-rare or medium. (Bone-in steaks take a few minutes longer to cook through than boneless.) If the pan begins to smoke or burn, lower the heat. Transfer steaks to a plate to rest while you prepare the sauce.
  • Add shallots to the skillet and cook over medium heat until lightly browned, about 1 minute. Add brandy to the skillet and use a long-handled match or igniter to set the brandy on fire. (Stand back when you do this.) Let flames die out, then add red wine and cook until reduced and syrupy, 2 to 4 minutes. Add stock and boil until reduced and thickened, 3 to 4 minutes longer.
  • Remove pan from heat and whisk in remaining 2 tablespoons butter and the chives. Serve steaks and sauce immediately with watercress.

ROSEMARY-RED WINE MARINADE

Rosemary-Red Wine Marinade image

This marinade is primarily for beef, but would work with any meat that you grill. The meat is placed in a plastic freezer bag with the marinade for at least 4 hours and up to 2 days. The marinade can be made up to 3 days in advance. It must be discarded after use as the ingredients will break down during the marination period. This makes enough for 3 pounds of meat.

RED WINE-ROSEMARY MARINATED FLANK STEAKS

Red Wine-Rosemary Marinated Flank Steaks image

Provided by Martha Stewart

Categories     Food & Cooking     Ingredients     Meat & Poultry     Beef Recipes

Number Of Ingredients 7

1 1/2 pounds flank steak
1/2 cup dry red wine
1/4 cup extra-virgin olive oil
1 teaspoon Dijon mustard
4 large cloves garlic, coarsely chopped
2 sprigs fresh rosemary, needles removed
1/2 teaspoon freshly ground black pepper

Steps:

  • Place steak in a shallow baking dish or a resealable plastic bag. In a small bowl, whisk together red wine, oil, mustard, garlic, rosemary, and black pepper. Pour marinade over steak; turn to coat. Let marinate, covered, in the refrigerator for at least 6 hours and up to 24.

Tips:

  • Choose high-quality steaks: For the best results, use steaks that are at least 1 inch thick and have good marbling.
  • Marinate the steaks overnight: This will allow the flavors of the marinade to penetrate the meat and make it more tender.
  • Use a cast iron skillet or grill pan: These pans will give the steaks a nice sear and help to lock in the juices.
  • Cook the steaks to your desired doneness: Use a meat thermometer to ensure that the steaks are cooked to your liking.
  • Let the steaks rest before serving: This will allow the juices to redistribute throughout the meat, making it more tender and flavorful.

Conclusion:

This recipe for Red Wine Rosemary Marinated Steaks is a delicious and easy way to cook steak. The marinade tenderizes the meat and infuses it with flavor, while the rosemary adds a delicious herbaceous note. These steaks are perfect for a special occasion or a casual weeknight meal. Serve them with your favorite sides, such as roasted vegetables or mashed potatoes.
