8 ounces button mushrooms, trimmed and sliced thin (about 3 cups)
1 small shallot, minced (about 1 1/2 tbsp.)
1 cup dry red wine
1/2 cup low sodium chicken broth
1 tablespoon balsamic vinegar
1 teaspoon Dijon mustard
2 tablespoons cold unsalted butter, cut into 4 pieces
1 teaspoon minced fresh thyme leave
salt & freshly ground black pepper

Steps:

  • Heat oil over medium-high heat until just smoking.

4 tablespoons (1/2 stick) unsalted butter
1/2 teaspoon crushed red pepper
1 medium shallot, thinly sliced
24 ounces cremini mushrooms, halved
Kosher salt and freshly ground black pepper
1 tablespoon minced fresh thyme
2 cloves garlic, grated on a rasp grater
1/2 cup dry red wine

Steps:

  • Heat 2 tablespoons of the butter in large skillet over medium heat until melted. Add the red pepper and shallots and gently cook until the shallots soften, about 3 minutes. 2 tablespoons butter
1/2 cup onion, minced
2 cups button mushrooms, sliced
2 cups chicken broth
1 teaspoon dried tarragon
1/2 cup dry red wine
2 tablespoons cornstarch

  • In a medium saucepan over medium heat, melt the butter.
  • Add the diced onions and saute for 2 minutes.
