1 cup coarse onions, chopped
1 cup celery

Steps:

  • Combine flour and pepper; coat beef cubes.
  • Reserve remaining flour mixture. In 3 tablespoons of hot oil, brown beef, and remove when brown.

1 1/2 teaspoons kosher salt
1 teaspoon freshly ground black pepper

Making an amazing stew is a whole lot simpler than most people figure. After you brown up your beef, all you basically have to do is throw a bunch of tasty ingredients in a pot and let it do its thing. Adding green beans at the end of cooking freshens up the stew and their snap is cool. You can make it completely in advance, as far as 2 days ahead of time. Just refrigerate it right in the pot and reheat it over low heat. You'll have to stir in a cup or so of water because the stew will have thickened up. (Do the water thing if you're reheating leftover stew too.) I use butter to brown the beef because it adds richness to the stew and makes for a creamier gravy. But you can substitute any type of oil for the butter if you want. Pretty much any decent red wine will do for stew; I like using Burgundy or Cabernet Sauvignon but the basic rule is that as long as you'd be happy drinking what you're cooking with you're in good shape.

2 pounds beef chuck for stew, cut into 1-inch cubes
Kosher salt and freshly ground black pepper
3 tablespoons butter
4 medium carrots, peeled, halved and cut into 1-inch chunks
3 small onions, diced
2 tablespoons all-purpose flour
2 (14 1/2-ounce) cans reduced-sodium beef or chicken broth
2 cups dry red wine
1 cup canned crushed tomatoes
3 sprigs fresh rosemary
2 medium russet or Yukon gold potatoes, peeled and cut into 1-inch chunks
2 handfuls green beans, ends trimmed

Steps:

  • Season the beef cubes lightly with salt and pepper. Heat 2 tablespoons of the butter in a heavy 6-quart pot over medium heat. As soon as the butter starts to turn brown, add half the beef and raise the heat to high. At first, the beef will give off some liquid, but once that evaporates, the beef will start to brown. Cook, turning the beef cubes on all sides until the pieces are as evenly browned as possible, about 5 or 6 minutes after the water has boiled off. If the pan starts to get too brown at any point, just turn down the heat a little. Scoop the beef into a bowl and brown the rest of the beef the same way using the remaining butter.
  • Scoop out the second batch of beef, then add the carrots and onions and raise the heat to medium-high. Cook until the onion starts to turn translucent, about 5 minutes. Stir in the flour until it has been worked into the veggies and you can't see it any more. Pour in the chicken broth, wine, and crushed tomatoes, and toss in the rosemary. Slide the beef back into the pot and bring the liquid to a boil.
  • Turn down the heat so the liquid is just breaking a gentle simmer. Partially cover the pot and cook 50 minutes. Stir the stew several times while simmering so it cooks evenly and nothing sticks to the bottom.
  • Stir the potatoes into the stew, cover the pot completely, and cook until the potatoes and beef are tender, stirring occasionally, about another 45 minutes. Add the beans and cook for another 5 minutes until the green beans turn bright green and are cooked through but still have a nice snap to them.

Red wine and beef are such an elemental combination that it's worth mastering the technique for a great stew: Sauté the ingredients quickly to caramelize and reduce, then cook through very slowly (preferably in a low oven, but see our Notes on how to cook in the slow cooker or pressure cooker). You can use any wine you like, since it will be cooked for a long time: the alcohol, acidity and fruitiness that make wine lovely in the glass are not so nice in the bowl; they have to be tamed by simmering. But the tangy, syrupy taste they leave behind is an ideal counterpoint to red meat. Celery is optional because some don't like it, but note that it's not eaten: It just provides a green flavor note alongside the sweet carrots and earthy potatoes.

About a dozen juniper berries
1/2 bottle red wine (not sweet)
Salt and freshly ground black pepper
4 garlic cloves (1 smashed and peeled, 3 minced)
4 tablespoons vegetable oil
3 stalks celery (optional)
3 large carrots
2 onions
1 large, starchy potato, such as Idaho
3 ounces pancetta (or French ventrèche), diced small (optional)
3 tablespoons olive oil
3 tablespoons tomato paste
Bouquet garni (2 sprigs fresh thyme, 2 sprigs fresh rosemary or parsley, 2 bay leaves, 6 juniper berries, 4 whole cloves, 1 teaspoon dried orange peel, wrapped in cheesecloth and tied)
1/2 bottle red wine
Chicken broth, as needed
3 tablespoons chopped parsley
1 tablespoon chopped fresh thyme leaves (or use additional parsley), for garnish

Steps:

  • Marinate the meat: In a large bowl, combine all the marinade ingredients. Mix well and refrigerate in the bowl or a thick sealable plastic bag for at least 2 hours or up to 1 day.
  • When ready to cook, strain off the marinade and reserve for cooking. Drain meat on paper towels and pat until very dry. Sprinkle with salt and pepper.
  • Place a large, heavy pot with a tight-fitting lid on the stove and rub the bottom with the smashed, peeled clove of garlic, until coated with the garlic's oils. Discard garlic.
  • Add 2 tablespoons vegetable oil, and cook over medium heat until shimmering. Add half the meat and brown gently on both sides while preparing the vegetables. There's no need for a hard crust to form; a little browning is all that's required. When browned, remove meat to paper towels to drain. Repeat with remaining 2 tablespoons oil and meat. Return all the browned, drained meat to the pot.
  • Meanwhile, cut the celery (if using) and carrots into large chunks. Peel and chop the onions. Peel and dice the potato.
  • Heat oven to 250 degrees. In a separate skillet, heat pancetta (if using) and olive oil over low heat. Cook gently until the fat renders. When the pork fat is running, add onions, celery, carrot, onion and minced garlic. (If not using pancetta, simply heat olive oil and add vegetables and garlic.) Cook gently, stirring, until softened and golden, about 10 minutes. Raise the heat, add tomato paste and cook, stirring, until fragrant and sizzling. Add the bouquet garni, reserved marinade and potato. Let bubble fiercely for 5 to 10 minutes, until liquid is thickened and syrupy. Add mixture, once cooked, to the pot with the meat.
  • Pour in the wine and, if needed, enough broth to just cover the ingredients. Stir to combine. Bring to a simmer, cover tightly and bake 4 to 5 hours, until the meat is soft enough to eat with a spoon and the sauce is rich and thick. After 4 hours, if liquid seems thin, uncover pot for the rest of the cooking.
  • When done, let cool slightly, uncovered. Remove and discard celery (if using) and bouquet garni. To thicken the stew, use a fork to mash some of the carrots and potatoes into the liquid; or, remove and purée them, then add back in. Taste and adjust the seasonings with salt and lots of freshly ground pepper.
  • Reheat and serve immediately, or let cool and refrigerate. Serve within 3 days; the flavor will only improve. Garnish each serving with a sprinkling of chopped thyme and parsley.

3½ Lbs. boneless beef chuck roast, trimmed, cut into 2½-inch pieces
--- sea salt and freshly ground pepper
3½ cups onions, chopped
2 cups Cabernet Sauvignon
14 oz. can diced tomatoes
½ cup hoisin sauce (available in the Asian foods section of the supermarkets)
2 bay leaves
1 lb. slender carrots, peeled, cut diagonally into 1-inch lengths
1 TBSP. cornstarch mixed with 1 TBSP. water
2 TBSP. fresh parsley, chopped

Steps:

  • Place the meat on paper towels and pat it dry. Sprinkle it generously with salt and pepper and set it aside.
  • Place a heavy, large pot (or Dutch oven) over medium-high heat on your stovetop. When it gets hot, add 2 tablespoons of olive oil and then add the meat. Sauté the meat until brown on all sides, about 10 minutes (depending on the size of your pot and the amount of meat, this step should be done in batches so as to ensure that all the meat gets browned evenly-do not crowd the pot). Remove the meat from the pot and reserve. Reduce the heat to medium; add 2 more tablespoons olive oil to pot. Add the onions and sauté them until they are golden brown, about 10-15 minutes.
  • Return the meat to the pot and mix it into onions. Add 1 cup of wine, the tomatoes with their juices, the hoisin sauce, and the bay leaves. Bring the stew to a boil. Reduce the heat to low, cover the pot, and simmer the stew for an hour, stirring occasionally.
  • Add the carrots and the remaining 1cup of wine. Cover again and simmer the stew for another 30 minutes or so, stirring occasionally. Uncover to pot and continue cooking until the sauce is slightly thickened, stirring occasionally, about 15 minutes longer.

Hoisin sauce is a sweet and spicy sauce that brings out extra flavor in any dish, you can find it in the Asian section of any large supermarket, all amounts may be adjusted to taste --- try this using a small chuck roast instead of beef cubes and increase the cooking time, the recipe may be doubled if desired --- I have made this stew many times it is *very* good!

1 1/2 lbs stewing beef, cut in cubes
salt and pepper (I use seasoned salt)
3 -6 tablespoons oil (I use bacon fat)
1 medium onion, chopped
2 tablespoons minced fresh garlic
1 -2 teaspoon crushed red pepper flakes (optional or to taste)
1 cup dry red wine
2 1/2 cups canned beef broth
3 tablespoons hoisin sauce
2 carrots, chopped in chunks
2 parsnips, peeled and cut into chunks
1 medium sweet potatoes, peeled and cut into chunks or 4 -5 medium potatoes, cut in chunks

Steps:

  • Pat beef dry with paper towel.
  • Season beef with salt and pepper.
  • In a Dutch oven, heat the oil over med-high heat.
  • Brown meat on all sides in batches, adding more oil as needed.
  • Transfer to a bowl.
  • In the same pot with remaining fat, saute the onions and garlic until tender.
  • Add red wine; bring to a boil, while scraping any browned bits stuck to the bottom.
  • Stir in beef broth and Hoisin; bring to a boil.
  • Return the beef to the pot, bring to a simmer, cook for 1-1/2 hours, or until beef is tender.
  • Stir in the carrots, parsnips and sweet potatoes; cook, uncovered fot 15-20 minutes, or until veggies are tender.

I love a really rich stew and this one was a recipe that I took ideas from other recipes and made my own. Having the crock pot means I can prepare it all the night before and then throw it all together and leave to cook the next morning. You could use any veggies you like in it and even add more (beans, peas etc). The hardest part of the recipe is cutting up the veggies. I hope you enjoy.

1 kg stewing beef
2 tablespoons olive oil
1 large onion, sliced
2 stalks celery, diced
2 carrots, diced

2 pounds beef from the flat-iron part of the shoulder
1 tablespoon butter
2 tablespoons olive oil
salt and pepper, to taste
1 cup onion, finely chopped
1 tablespoon garlic, finely chopped
1 tablespoon flour
1 bottle of red wine
2 bay leaves
1 sprig fresh thyme
15 cipollini or pearl onions
15 crimini mushrooms
15 baby carrots
1 (5-ounce) piece of pancetta
1/4 cup water
dash of sugar
chopped fresh parsley to taste to garnish

Steps:

  • Buy about 2 pounds of beef from the flatiron part of the shoulder. Remove the skin or sinew from the top. Alternatively, use lean beef chuck in the same manner. Cut the meat into 8 pieces. Preheat the oven to 350°F. Melt 1 tablespoon of butter with 1 tablespoon of olive oil in a cast-iron pot that is attractive enough for the table. Arrange the meat in one layer in the pot, and season it with salt and pepper. Cook on top of the stove over high heat for about 8 minutes, browning the meat on all sides. Add 1 cup of finely chopped onion and 1 tablespoon of finely chopped garlic. Cook over moderate heat for an additional 5 minutes, stirring occasionally. Add 1 tablespoon of flour. Mix in well so that the flour doesn't form lumps. Stir in 1 bottle of red wine. Add 2 bay leaves, a sprig of fresh thyme, salt and pepper and bring to a boil. Stir well and cover. For the garnishes, peel 15 cipollini or pearl onions, wash 15 cremini mushrooms and peel 15 baby carrots. For the lardons, you will need one 5-ounce piece of pancetta. Bring the pancetta and 2 cups of water to a boil in a saucepan, and simmer for about 30 minutes; drain. Cut the pancetta into 1/2-inch slices and then cut the slices into 1-inch-wide lardons. Combine the onions, mushrooms, carrots and pancetta in a skillet with 1 tablespoon of olive oil, 1/4 cup of water and a good dash each of sugar, salt and pepper. Bring to a boil and simmer, covered, for about 15 minutes; at this point, there should be practically no water left. Uncover and cook over high heat, sautéing the vegetables until nicely browned on all sides, about 4 minutes. To serve, mix some of the vegetables and lardons into the stew and sprinkle the rest on top as a garnish. Add a little chopped fresh parsley and serve.

4 tablespoons flour, divided
1 3/4 teaspoons salt, divided

29 ounces low sodium beef broth
1/2 teaspoon dried thyme
1 bay leaf
1 small turnip
8 ounces fresh mushrooms
16 ounces baby carrots

Steps:

  • Cut beef into 2 to 2 1/2 inch pieces; pat with paper towels to absorb excess moisture. Combine 3 tablespoons flour, 1 teaspoon salt, paprika and pepper in a bowl; toss beef with flour mixture.
  • Cook beef in batches, in hot oil in a Dutch oven over medium-high heat, stirring often, 4-6 minutes until brown. Remove beef from Dutch oven. Add red wine, stirring to loosen particles from bottom of Dutch oven. Return beef to Dutch oven; add broth, thyme, bay leaf, and 1/2 teaspoon salt. Bring to a boil. 12 small red potatoes, halved
5 carrots, cut in chunks
1 large onion, cut in pieces
8 ounces mushrooms, halved if large

1 (10 3/4 ounce) can tomato soup
2 cups red wine
1 cup water

Steps:

3 lbs beef stew meat, preferably chuck, trimmed of excess fat
kosher salt
fresh ground pepper
vegetable oil
2 tablespoons butter
3 yellow onions, thinly sliced
2 teaspoons sugar
2 tablespoons all-purpose flour
1 1/2 teaspoons dried thyme
1 1/2 cups red wine, such as Pinot Noir
1/2 cup low sodium beef broth or 1/2 cup chicken broth
1 tablespoon tomato paste

Steps:

  • Cut the meat into 2-inch pieces, rinse, and pat dry with paper towels.
  • Sprinkle with salt and pepper.
  • Coat the bottom of a 5- to 7-quart Dutch oven with a thin film of the oil and set pot over med-high heat.
  • When oil shimmers, add enough meat to cover bottom in 1 layer.
  • Cook, without stirring, until meat lifts easily from pot with tongs and is well browned on bottom, about 5 minutes.
  • Turn and brown on the other side, about 5 minutes more.
  • Transfer meat to a plate and continue with remaining meat, adding more oil to pot on between batches as needed.
  • When last batch of meat has been removed, add the butter to the pot, then the onions and a good pinch of salt, and cook, stirring often, until onions are softened, about 3 minutes.
  • Decrease heat to low and sprinkle the sugar over the onions.
  • Cook, stirring occasionally, until onions are limp and golden, about 15 minutes.
  • Stir in the flour and thyme and increase heat to high.

  • 1. Preheat oven to 300. 2. Finely chop onion, carrot, and garlic. 3. Finely chop parsley and bacon. 3. remove a 2 1/2 inch strip of peel from orange with peeler. Remove rest of peel for another use. 4. Cook bacon in 8 quart oven proof heavy kettle over moderate heat, until crisp. Remove with slotted spoon to separate bowl, reserving drippings in kettle. 5. Pat beef dry, cut each piece into 2 inch pieces, reserving bones. 6. Season with salt and pepper. Working in batches, brown in reserved drippings 3 min. per side, transferring to bowl. 7.Add oil to kettle and cook onion, carrots and garlic until soft. 8. return bacon and beef to kettle and stir in flour. cook 1 min. to coat beef. 9. Stir in wine, tomatoes with juice, zest, parsley, thyme, bay leaves, salt, peppercorns, and cloves and bring to a simmer. 10. Cover and cook in oven, 3 hours. 11. Transfer beef and bones with a slotted spoon to a bowl.Scrape marrow from bones, add to beef. discard bones. 12. Discard bay leaves, and zest. 13. pit olives and add to sauce. Boil sauce 20 minutes. return meat to sauce and simmer until heated through. 14. garnish with parsley, serve with rice. 15. May be made 2 days ahead, cooled completely, and chilled.

3lb stew beef, cut into 1 inch cubes
1 (750-ml) bottle Marquette (or other dry red wine)
salt and freshly ground pepper, to taste
3 springs fresh thyme
2 bay leaves
2 carrots, peeled and cute into 1/2 inch slices
1 orange, washed well and cut into 8 wedges (may substitute grapefruit, tangerine, etc.)
1 large onion, peeled and cute into rings (I prefer Vidalia or other sweet onions)
2 cloves garlic, peeled and sliced
olive oil
1 6-oz can of tomato paste
3 1/2 oz. pitted black olives (may omit if you do not like olives)

Steps:

  • 1. Season mate with salt and pepper on all sides. Place meet in a big bowl. Add wine, thyme, bay leaves, carrots, orange, onion and garlic. Cover and marinate in the fridge for at least 12 hours, and preferably 24 hours. 2. Heat some olive oil over medium heat in a large stockpot. Remove the mat from the marinade and growth he pieces in the oil on all sides. Pour the marinate (including the orange, bay leaves, etc.) over the meat and bring to a boil. Boil for 5 minutes, skimming any foam from the surface. Lower the heat to a simmer, stir in the tomato past and add 4 1/2 cups water.
