MAPLE GLAZED CARROTS
I like to make this side dish when I want to add some color to my meal. The touch of maple syrup is a nice surprise and so compatible with the carrot flavor. The crunch of pecans adds a special touch. -Sharon Bickett, Chester, South Carolina

Steps:
- Heat butter in a 12-inch heavy skillet over moderate heat until foam subsides, then cook shallots, stirring occasionally, until softened, about 4 minutes.
- Add chili powder, salt, and pepper and cook, stirring, until chili powder is very fragrant, about 1 minute.
- Add carrots, maple syrup, and wine and simmer, covered, stirring occasionally, until carrots are tender, about 20 minutes.
- Add vinegar and boil, uncovered, until liquid is reduced to a glaze, 3 to 5 minutes.
- Remove from heat and stir in dill.
Tips:
- To enhance the flavor of the carrots, roast them at a high temperature. This will caramelize the natural sugars in the carrots and give them a slightly crispy exterior.
- If you don't have maple syrup, you can substitute honey or brown sugar. However, maple syrup will give the carrots a more unique and complex flavor.
- Feel free to add other vegetables to the roasting pan, such as parsnips, turnips, or sweet potatoes. This will create a colorful and flavorful side dish.
- Garnish the carrots with fresh herbs, such as parsley, cilantro, or thyme, before serving. This will add a pop of color and flavor to the dish.
Conclusion:
Roasted carrots with red wine and maple glaze are a delicious and easy-to-make side dish that is perfect for any occasion. The carrots are tender and flavorful, with a slightly crispy exterior and a sweet and savory glaze. This dish is sure to be a hit with everyone at your table.
