Time 25m

Yield 4 servings

Number Of Ingredients 7

4 (8-ounce) fish fillets such as red snapper
Kosher salt and freshly ground black pepper
8 ounces creme fraiche
3 tablespoons Dijon mustard
1 tablespoon whole-grain mustard
2 tablespoons minced shallots
2 teaspoons drained capers

Steps:

  • Preheat the oven to 425 degrees F.
  • Line a sheet pan with parchment paper. (You can also use an ovenproof baking dish.) Place the fish fillets skin side down on the sheet pan. Sprinkle generously with salt and pepper.
  • Combine the creme fraiche, 2 mustards, shallots, capers, 1 teaspoon salt, and 1/2 teaspoon pepper in a small bowl. Spoon the sauce evenly over the fish fillets, making sure the fish is completely covered. Bake for 10 to 15 minutes, depending on the thickness of the fish, until it's barely done. (The fish will flake easily at the thickest part when it's done.) Be sure not to overcook it! Serve hot or at room temperature with the sauce from the pan spooned over the top.

Time 20m

Yield 4 serving(s)

Number Of Ingredients 9

4 (8 ounce) fish fillets, such as red snapper
kosher salt & freshly ground black pepper
8 ounces creme fraiche (found in the dairy section)
3 tablespoons Dijon mustard
1 tablespoon whole grain mustard
2 tablespoons shallots, minced
2 teaspoons capers, drained
1 teaspoon kosher salt
1/2 teaspoon fresh ground black pepper

Steps:

  • Preheat the oven to 425 degrees F.
  • Line a sheet pan (with sides) with parchment paper. You can also use an ovenproof baking dish. Just make sure you use one large enough so the fish won't be crowded. If you crowd the fish, it won't cook in the directed time.
  • Place the fish fillets, skin side down, on the prepared pan and sprinkle generously with salt and pepper.
  • Combine the creme fraiche, two mustards, shallots, capers, 1 t. salt and 1/2 t. pepper in a small bowl. Mix well.
  • Spoon the sauce evenly over the fish fillets, making sure the fish is completely covered.
  • Bake for 10 to 15 minutes, depending on the thickness of your fish, until it is just done. The fish will flake easily, using a fork, at the thickest part when it is done. Be sure not to overcook it!
  • Serve the fish fillets with the sauce from the pan spooned over the top.

Provided by Peter Pan

Categories     Very Low Carbs

Time 17m

Yield 4 serving(s)

Number Of Ingredients 6

4 (6 ounce) red snapper fillets
3 tablespoons lemon juice
2 tablespoons prepared mustard (I use French's Dijon)
2 tablespoons mayonnaise
2 stalks green onions, finely chopped
salt and pepper, to taste (I prefer garlic salt)

Steps:

  • Arrange fish fillets in a baking pan or baking dish.
  • Sprinkle fish with lemon juice, salt and pepper.
  • Broil fish in oven for about 7 to 9 minutes or until fish is opaque.
  • Meanwhile, mix prepared mustard, mayonnaise, green onions and salt.
  • Spread sauce over fish and broil for a couple more minutes or until sauce begin to bubble.
  • Serve immediately with steamed rice and a side of steamed vegetables.

Tips:

  • When choosing a red snapper, look for one with bright red eyes, firm flesh, and a mild fishy smell.
  • To ensure the fish is cooked evenly, make sure the fillets are of uniform thickness.
  • If you don't have a steamer, you can cook the fish in a covered skillet over medium heat, adding a little water or broth to prevent sticking.
  • Be careful not to overcook the fish, as it will become tough and dry.
  • To make the mustard sauce, use a good quality Dijon mustard for the best flavor.
  • If you like a tangier sauce, add a squeeze of lemon juice or a splash of white wine vinegar.
  • Serve the red snapper with the mustard sauce immediately, garnished with fresh herbs such as parsley or chives.

Conclusion:

Red snapper with mustard sauce is a classic French dish that is both elegant and delicious. The delicate flavor of the fish is perfectly complemented by the rich, tangy mustard sauce. This dish is sure to impress your guests, whether you are serving it for a special occasion or a casual weeknight meal.
