SWISS POTATO GRATIN

Swiss Potato Gratin image

I have had this recipe in my files for a long time - originally given to me by a friend. Love the gruyere cheese in this dish. Cook time depends upon thickness of potatoes - 45 minutes minimum cook time. Originally from Allrecipes

Categories     Side Casseroles

Time 1h10m

Number Of Ingredients 9

2 lb red-skinned boiling potatoes
1 c ricotta cheese
3/4 c parsley, chopped
salt and freshly ground black pepper to taste
nutmeg to taste
1 egg
1 c heavy cream (approximately)
butter for greasing baking dish
1/4 lb gruyere cheese, grated (about 1 cup)

Steps:

  • 1. Wash potatoes well. Slice potatoes thin and drop them into a pot of cold, salted water. Set over high heat and bring to a boil. Boil potatoes for 1 minute, drain, and rinse with cold water. Drain again and pat dry.
  • 2. Combine ricotta and parsley and season generously with salt, pepper and nutmeg.
  • 3. Beat the egg briefly and add enough heavy cream to make 1 cup of liquid. Season with salt and pepper and nutmeg.
  • 4. Lightly butter a shallow, oval gratin dish measuring 9 x 12 inches. Arrange a layer of slightly overlapping potato slices in the dish. Dot with about one third of the ricotta mixture; sprinkle with one-third of the cheese. Repeat, using all of the ingredients and ending with a potato layer.
  • 5. Gently pour the egg and cream mixture into the dish, lifting potato slices with a fork if necessary to allow the cream to spread evenly among them.
  • 6. Bake on the center rack of a preheated 350 degree oven for 35-45 minutes, or until potatoes are tender and the cheese is browned and bubbling. Let sit for 10 minutes before serving.

SWISS SCALLOPED POTATOES

Swiss Scalloped Potatoes image

I wanted to make scalloped potatoes but I only had Swiss cheese. so i tweaked a basic recipe and here's my version.

Provided by Diane C.

Categories     Side Casseroles

Time 1h30m

Number Of Ingredients 8

2 Tbsp butter, unsalted
2 Tbsp all purpose flour
1 c soymilk
20 slice swiss cheese or 2 c shredded
1/4 tsp nutmeg
1/2 medium onion, chopped fine
6 medium potatoes, russets
dash(es) salt and pepper

Steps:

  • 1. Preheat oven to 350 degrees. Spray an 8x8 cooking dish with non-stick cooking spray. Set aside. Peel and chop the onion. Set aside.
  • 2. Peel the potatoes. Cut the potatoes into thin slices. ( a mandoline or ceramic slicer works great for this step.) Put the potatoes to soak in a little cold water while you prepare the sauce.
  • 3. To make the sauce, melt the butter in a 2 qt. saucepan over medium heat. Add the flour and stir with a whisk to make a roux. (It should look like creamy peanut butter at this point.)
  • 4. Slowly add the soymilk, stirring to blend. Bring the mixture just to a boil, then reduce heat to a simmer. Stir til thickened. Take 6 slices of Swiss cheese and tear them into pieces. Add the pieces to the sauce. Stir until melted. Add nutmeg and stir well. Remove from heat.
  • 5. For the assembly, drain the potatoes, and blot lightly with a paper towel. Layer the casserole as follows: Put 1/4 C sauce in the pan. Layer potatoes, onions, salt and pepper, 4 slices of cheese and 1/3 of the remaining sauce. Repeat twice ending with remaining cheese and sauce. Spread sauce to cover cheese.
  • 6. Bake at 350 degrees for 1 hour.
  • 7. Notes: you can use milk instead of soymilk. If so, warm the milk in a microwave for about 30-45 seconds at 40% power before adding it to the roux. You can caramelize the onions before adding them to the casserole, for richer flavor.

Tips:

  • For a crispy crust, roast the potatoes in a single layer on a baking sheet. Don't overcrowd the pan, or the potatoes will steam rather than roast.
  • To save time, use pre-cut frozen potatoes. Just be sure to thaw them before roasting.
  • If you don't have a mandoline, you can use a sharp knife to thinly slice the potatoes. Just be careful not to cut yourself.
  • Use a good quality Swiss cheese that melts well. Gruyère or Emmental are both good choices.
  • For a more flavorful dish, use a combination of cheeses. Try adding Parmesan, cheddar, or mozzarella to the Swiss cheese.
  • If you like crispy cheese, broil the potatoes for a few minutes at the end of the cooking time.
