  • Combine the bell peppers and heavy cream in a pot and bring to boil over medium heat; reduce heat to medium-low and continue simmering, stirring occasionally, until the cream reduces to about 1 cup, about 30 minutes.   • Char the peppers over a flame; place in a bowl and cover to steam until cooled. Peel and seed, reserving the juice.

1 red bell pepper

  • Turn broiler on high. Form a shallow bowl out of a piece of Reynold's Wrap foil. Place red pepper on foil to prevent from rolling. 1/2 lb chopped asparagus

8 ounces fresh sliced mushrooms

Steps:

  • Preparing Penne:.
  • In a large stockpot, add 4 quarts of water and 1 tbsp crushed red pepper and bring to a boil.
  • Add the 16oz package of penne rigate and stir every 2-3 minutes, maintaining a rolling boil. After approximately 14 minutes (time may vary slightly depending on brand of pasta) drain pasta and rinse in cold water to keep the pasta from cooking further.
  • Let pasta sit for 5 minutes after the rinse, and the starchiness will come back to the surface of the pasta, allowing the sauce to stick to each noodle.
  • Red Pepper and Tomato Cream Sauce:.
  • Dice red bell pepper and saute in a small skillet until it begins to soften.

  • Take Olive Oil, salt, pepper, and Cayenne in zip lock bag with Scallops and marinate for 30 minutes. turning once. Combine Roasted Red Pepper, half of the Heavy Cream and Parmesean Cheese. Mix in food processor. Blend until smooth. Scald other half of Heavy Cream. In a hot skillet, preferable cast iron, sear Scallops. about 3 minutes per side. Do not add any additional oil to pan. As Scallops are placed in the pan, shake the pan to ensure Scallops do not stick. When Scallops are finished remove from direct heat add Heavy Cream and Red Peeper sauce that was prepared ahead.   • Set oven to 350 degrees.
