Time 45m

Number Of Ingredients 5

3 c thinly sliced red onions (3to4 red onions)
2 Tbsp balsamic vinegar
1 1/2 tsp honey
pinch kosher salt and freshly gound black pepper
1 c store-bought tomato ketchup

Steps:

  • 1. place onions in a heavy bottom saucepan and add the vinegar, honey. salt, and pepper. bring to a simmer over medium heat and continue to simmer for about 15 minutes, stirring frequently, until the liquid has evaporated. Remove the pan from the heat and let cool.
  • 2. transfer the cooled onion mixture to the bowl of a food processor and puree until smooth. add the ketchup and pulse several times until throughly incorporated. adjust the seasonings, transfer to an air tight container, and store in the refrigerator.

Tips:

  • Choose ripe, firm tomatoes: The quality of your tomatoes will greatly impact the taste of your ketchup. Look for tomatoes that are deep red in color, firm to the touch, and free of blemishes.
  • Use fresh red onions: Fresh red onions will give your ketchup a more vibrant flavor and color. If you can't find fresh red onions, you can use yellow or white onions, but the flavor will be milder.
  • Don't overcook the onions: Overcooked onions will turn mushy and lose their flavor. Cook them just until they are softened and translucent.
  • Use a variety of spices: The spices you use will determine the flavor of your ketchup. Common spices used in ketchup include paprika, garlic powder, onion powder, celery salt, and ground cloves.
  • Simmer the ketchup for at least 30 minutes: This will allow the flavors to meld and develop.
  • Taste the ketchup as you go: Adjust the seasonings to your liking. You may want to add more sugar if you prefer a sweeter ketchup, or more vinegar if you prefer a tangier ketchup.
  • Can or bottle the ketchup: Once you're happy with the flavor of your ketchup, you can can or bottle it for storage. Canned or bottled ketchup will last for up to a year.

Conclusion:

Red onion ketchup is a delicious and versatile condiment that can be used on a variety of foods. It's perfect for burgers, hot dogs, fries, and even as a dipping sauce for chicken nuggets or vegetables. With a few simple ingredients and a little bit of time, you can make your own red onion ketchup at home. So next time you're looking for a new condiment to try, give red onion ketchup a try.
