RED LENTIL AND TOFU CURRY
Steps:
- Thinly slice onion and mince garlic. Peel gingerroot and mince. In a sieve rinse lentils and drain. In a 2-quart heavy saucepan cook onion and garlic in 1 tablespoon oil over moderate heat, stirring, until golden. Add gingerroot and cook, stirring, 1 minute. Add lentils and water and gently boil, uncovered, until lentils fall apart, about 20 minutes.
- While lentils are boiling, rinse tofu and trim ends. Cut tofu into 1/2-inch cubes and gently press between paper towels to remove excess moisture.

Add garam masala, salt, and cayenne and cook, stirring, until fragrant, 15 to 30 seconds. Stir hot spice oil into lentils and gently stir in tofu cubes. Let curry stand, covered, 5 minutes to allow flavors to develop. Stir in cilantro and salt to taste.

Tips:
- Use high-quality red lentils. Look for lentils that are whole and free of debris. Split lentils will cook faster than whole lentils, but either type can be used in this recipe.
- Rinse the lentils before cooking. This will help to remove any dirt or debris. Rinsing the lentils also helps to prevent them from foaming during cooking.
- Use a variety of vegetables. This will add flavor and nutrients to the curry. Some good options include carrots, potatoes, onions, garlic, and tomatoes.
- Season the curry to taste. The curry should be flavorful but not too spicy. Add salt, pepper, and other spices to taste.
- Serve the curry with rice or naan bread. This will help to soak up the delicious sauce.
Conclusion:
Red lentil curry is a delicious and healthy dish that is easy to make. It is a great option for a weeknight meal or a casual get-together. With its vibrant color and flavorful sauce, red lentil curry is sure to be a hit with everyone who tries it.
