"RED EYE" (BEER 'N TOMATO OR CLAMATO JUICE)
I love beer 'n tomato juice cocktails! You can vary this recipe to your own personal taste, too. Some like barely any in there at all, just a shot, and some like as much as half and half! Other ingredients can be added as well as garnishes! Just have fun and enjoy! (Photo from bing images)

RED CAKE WITH BEET JUICE
Urban legends surround the "red cake" recipe made with red food coloring. It was not sold by the Waldorf Astoria but it does date back to the early 1900's! Not being a fan of cooking flour to make icing or risking some unknown health issue over too much red food coloring I opted for this beet juice red cake recipe. I am posting...

Steps:
- 1. Preheat oven to 350 degrees. Grease and flour two 9" cake pans. Remember to use glass and metal utensils to avoid beet juice stains
- 2. Add salt and cocoa to sifted flour and sift again.
- 3. With mixer on medium, cream together vegetable shortening and sugar for at least five minutes.
- 4. Add eggs one at a time, beating at least one minute after each addition
- 5. Add beet juice and vanilla to buttermilk. Alternate adding these liquids and the flour, salt, cocoa mixture to the sugar and shortening. Use a spatula or put your mixer on LOW. Do not over beat
- 6. Pour vinegar into a small bowl and add baking soda. It will foam briefly. Fold gently into the cake batter. Do not beat. The batter will be somewhat thick. Add water if necessary to make the pour-able batter
- 7. Pour batter into prepared cake pans and bake at 350 degrees for 30 minutes. Allow layers to cool 10 minutes before removing form pans. Cool cake completely before frosting
Tips:
- Choose ripe, juicy tomatoes: The quality of your tomatoes will greatly impact the flavor of your red juice. Look for tomatoes that are deep red in color, plump, and free of blemishes.
- Use a variety of tomatoes: Don't be afraid to mix and match different types of tomatoes. This will add depth and complexity to the flavor of your juice.
- Roast your tomatoes: Roasting tomatoes intensifies their flavor and makes them sweeter. If you have the time, roast your tomatoes before juicing them.
- Add some herbs and spices: A few well-chosen herbs and spices can really enhance the flavor of your red juice. Try adding basil, oregano, garlic, or cayenne pepper.
- Sweeten it up: If you find your red juice is too tart, you can sweeten it up with a little bit of honey, maple syrup, or agave nectar.
Conclusion:
Red juice is a delicious and nutritious way to get your daily dose of fruits and vegetables. It's also a great way to use up leftover tomatoes. With so many different recipes to choose from, there's sure to be a red juice recipe that you'll love. So next time you're looking for a healthy and refreshing drink, give red juice a try.
