HOMEMADE RED HOT SAUCE
Steps:
- Combine the peppers, garlic, onions, salt and oil in a non-reactive saucepan over high heat. Saute for 3 minutes. Add the water and continue to cook, stirring occasionally, for about 20 minutes, or until peppers are very soft and almost all of the liquid has evaporated. (Note: this should be done in a very well-ventilated area!) Remove from the heat and allow to steep until mixture comes to room temperature. In a food processor, puree the mixture for 15 seconds, or until smooth. With the food processor running, add the vinegar through the feed tube in a steady stream.
- Taste and season with more salt, if necessary. (This will depend on the heat level of the peppers you use as well as the brand of vinegar used.) Strain the mixture through a fine mesh sieve and then transfer to a sterilized pint jar or bottle and secure with an airtight lid. Refrigerate. Let age at least 2 weeks before using. Can be stored in the refrigerator for up to 6 months.

Tips:
- Use a good quality cinnamon: The type of cinnamon you use will make a big difference in the flavor of your sauce. Look for a Ceylon cinnamon, which is known for its sweet and delicate flavor.
- Toast the cinnamon sticks before grinding: Toasting the cinnamon sticks will help to release their flavor. You can do this in a toaster oven or on a baking sheet in the oven.
- Use a fine mesh strainer: When straining the sauce, be sure to use a fine mesh strainer to catch any bits of cinnamon or sugar that may have not dissolved.
- Taste the sauce as you go: The amount of sugar you add to the sauce will depend on your personal preference. Taste the sauce as you go and add sugar until you reach the desired sweetness.
- Let the sauce cool completely before storing: Once the sauce has been made, let it cool completely before storing it in a jar or container. This will help to prevent the sauce from crystallizing.
Conclusion:
Red Hot Cinnamon Sauce is a delicious and versatile sauce that can be used on a variety of foods.
