15 pounds early-season apples (Gala, Jonathan and/or Cortland), peeled and quartered
3/4 cup cider vinegar
5-1/3 cups packed brown sugar
4 cups sugar
2 tablespoons ground cinnamon
1 teaspoon salt
1 teaspoon cinnamon extract
1/2 teaspoon ground cloves
1/2 teaspoon ground allspice
1 cup red-hot candies
1 cup boiling water

Steps:

  • In a stockpot, combine apples and vinegar; bring to a boil. Reduce heat; simmer, uncovered, 30-40 minutes or until tender. Remove from heat; cool slightly. Process in batches in a food processor until blended. Return all to pan., Add brown sugar, sugar, cinnamon, salt, extract, cloves and allspice. 10 lbs tart red cooking apples, washed, cored, and cut into wedges
4 to 5 cup sugar
1 1/2 tsp ground cinnamon
50 to 60 red hots candies (1.75 oz)

  • 1. Special tools: large, heavy-bottomed pan, sieve In a large, heavy-bottomed pan (such as cast iron), bring the cider to a boil. Cook it down to 2 1/2 cups. Add apples and simmer until they are mushy and no longer watery, about 2 hours. Push apple mixture through a sieve into a large bowl, removing any apple skin and lumps. Measure the apple mixture in cups and put back in the pot. For every 1 cup of pulp, add 1/2 cup sugar. Then, add ground cinnamon and candies. 4 Honeycrisp apples - peeled, cored, and chopped
1 lemon, juiced
¼ cup cinnamon red hot candies
2 tablespoons brown sugar, or to taste

¼ cup brown sugar, divided
4 teaspoons butter, divided
4 12x12-inch squares aluminum foil

9 c. cooked apples (about 18)
6 c. sugar
1/3 c. vinegar
1/8 tsp. cloves
1/4 tsp.cinnamon
1/2 c. Red Hots candy (be sure to get the Red Hots brand!..they come in a box at Walgreens and Walmart.)

Steps:

  • Wash, pare, quarter and core apples. Add a small amount of water; cover and cook slowly until tender. Drain off any water. Chop with stick blender. Add sugar, vinegar, spices, and red hots. Bring to a boil; let boil 4 or 5 minutes. Ladle into hot jars - remove air bubbles - and process in boiling water bath for 10 minutes. Makes 6 pints.
