24 chicken wings separated at the joint
olive oil
salt
1/2 c melted butter
1 Tbsp red curry paste
1 large lime juice and zest
3 Tbsp honey
1 Tbsp soy sauce

Steps:

  • 1. Preheat oven 425 degrees. Line a large baking sheet with wax paper. Line the chicken wings skin side up on the baking sheet. Drizzle with olive oil and sprinkle with salt. Roast for 20 minutes then turn on the broiler and broil about 3 to 5 minutes until golden.

Extra-virgin olive oil
Kosher salt and freshly ground black pepper
8 tablespoons (1 stick) unsalted butter, softened
1 big, fat rounded tablespoon Thai red curry paste
1/4 cup honey
1/4 cup soy sauce
1 lime, halved
Chopped cilantro leaves, for garnish

Steps:

  • Preheat the oven to 425 degrees F.
  • Rinse the wings under cool water and pat dry. Put them in a bowl, drizzle with olive oil and season well with salt and pepper. Toss to coat with the seasoning. Then spread the wings out on a baking sheet and roast about 25 minutes until the skin gets crisp and brown, and the meat is tender.

4 lb chicken wings
extra virgin olive oil
kosher salt and freshly ground black pepper
1/2 c unsalted butter, softened
2 tsp thai red curry paste
1 lime, zested and juiced
1 Tbsp honey
splash soy sauce
cilantro leaf (to garnish)

  • 1. Preheat the oven to 425 degrees. Rinse the wings under cool water and pat dry. Place the wings in a bowl and drizzle with olive oil, salt and pepper - toss to coat. Spread the wings out on a baking sheet and roast for 25-30 minutes, until the skin gets crisp and brown and the meat is tender.

1.5 pounds chicken wings ((680g))
salt and pepper
2-3 teaspoons Thai Red Curry paste ((you can find this in a can or packet at the Asian grocery store and some large supermarkets))
½ tablespoon soy sauce
½ tablespoon olive oil
3 teaspoons honey
Juice from ½ of a large lime
¼ teaspoon salt
a handful of chopped cilantro

  • Season the wings with salt and pepper (we used the little drumettes only, because they're actually cheaper here in China than the other part of the chicken wing, and we like them better). It's best to marinate them overnight, but it's not strictly necessary.
  • Preheat the oven to 425 degrees and roast the wings for 30 minutes. We're not allowed to barbecue here in the city center of Beijing, but feel free to grill the wings if you want. The smokiness will be fantastic.
