RED CURRANT FOOL

Yield serves 4 to 6

Number Of Ingredients 4

4 tablespoons (1/4 cup) unsalted butter
3 1/2 cups fresh red currants (about 18 ounces), stems removed
3/4 cup sugar
1 1/2 cups heavy cream

Steps:

  • Melt the butter in a large skillet set over medium heat, and stir in the currants and sugar. Cover, and reduce heat to low. Cook, stirring occasionally, until the sugar has dissolved and the currants have softened, about 5 minutes.
  • Remove the skillet from the heat, and lightly crush the fruit with the back of a wooden spoon. Don't mash to a puree; some texture should remain. Transfer the mixture to a bowl, and cool completely in the refrigerator before proceeding.
  • In a small bowl, whisk the cream until it holds soft peaks. Set aside 1/2 cup fruit mixture. Gently fold the whipped cream into the remaining fruit mixture, leaving it marbled. Serve immediately in individual bowls, garnished with a spoonful of the reserved fruit mixture.

Tips for Making the Perfect Red Currant Fool

  • Use fresh, ripe red currants. This will give your fool the best flavor.
  • If you can't find fresh red currants, you can use frozen or dried currants. Just be sure to thaw the frozen currants before using them.
  • Don't overcook the currants. They should be cooked until they are just softened, but not mushy.
  • Use a good quality custard. This will make your fool rich and creamy.
  • Don't overbeat the cream. You want it to be whipped, but not stiff.
  • Garnish your fool with fresh red currants or other berries.

Conclusion

Red currant fool is a delicious and easy-to-make dessert that is perfect for any occasion. It is light and refreshing, and the tartness of the currants is perfectly balanced by the sweetness of the custard and cream. Whether you are serving it for a special occasion or just as a simple treat, red currant fool is sure to please everyone.
