6 pounds mixed apple varieties (Gala, Honeycrisp, Golden Delicious), peeled, cored and cut into eighths
1 cup apple juice or water
Juice of 1/2 lemon
1/2 cup light brown sugar
1 teaspoon cinnamon

Steps:

  • Throw the apples, apple juice and lemon juice into a pan and bring it to the boil over medium-high heat. Lower the heat and simmer until the apples are soft, about 15 minutes. Stir through the sugar and mix until melted. Add the cinnamon and stir through.
  • Puree the mixture in a food processor, blender or food mill. If not using right away, leave to cool and then refrigerate.

5 tbsp peach conserve
100g fresh redcurrants
250g self-raising flour
1 tsp baking powder
175g butter , softened
175g golden caster sugar
2 eggs , beaten
1 tsp vanilla extract
4 tbsp milk
170ml pot soured cream

  • Heat oven to 190C/fan 170C/gas 5 and butter a non-stick 23cm ring tin. Arrange the peaches, cut side up, in the base if the tin, then randomly spoon in the peach conserve and scatter over the redcurrants.
