CHILI GLAZED MEATLOAF

Chili Glazed Meatloaf image

This is a really delicious version of Meatloaf that I really love. I like the sweet tang of the Chili Sauce. This is adapted from Martha Stewart's recipe, but I have changed a few of the ingredients to suit what I had in my pantry. It's just the two of us, so I made a small meatloaf, which was perfect! NOTE - if you double...

NEW MEXICO GREEN CHILE MEATLOAF

New Mexico Green Chile Meatloaf image

Growing up in New Mexico, we had access to the Hatch green chile (the best!). I add green chile to a lot of my recipes and it rather sets this meatloaf off. It's very good cold, made into sandwiches the second day.

2 1/4 pounds ground dark turkey meat
2 slices white bread, torn into small pieces (about 1 1/2 cups)
1 small red onion, minced (about 3/4 cup)
1/2 cup cilantro leaves, finely chopped
1 large egg, lightly beaten
2 teaspoons Worcestershire sauce
2 teaspoons minced chipotle chiles

Coarse salt and freshly ground pepper
1/2 cup ketchup
6 small sweet potatoes (about 7 ounces each)
2 tablespoons extra-virgin olive oil
Watercress and lime wedges, for serving

Steps:

  • Preheat oven to 375 degrees. Combine meat, bread, onion, cilantro, egg, Worcestershire, adobo sauce, 1 1/2 teaspoons salt, and 1/2 teaspoon pepper in a bowl. Transfer mixture to a 5-by-9-inch nonstick loaf pan. Stir together chiles and ketchup; brush onto top of loaf.

Peel potatoes; add oil, season with salt and pepper, and mash. Reserve half of loaf for next day; serve remainder with potatoes, watercress, and limes.

Tips:

  • For the best flavor, use a combination of ground beef and ground pork.
  • Be sure to use a good quality breadcrumb, such as panko or fresh bread crumbs.
  • Don't overmix the meatloaf mixture, as this will make it tough.
  • To ensure that the meatloaf is cooked through, use a meat thermometer to check that the internal temperature has reached 160 degrees Fahrenheit.
  • Let the meatloaf rest for 10 minutes before slicing and serving.

Conclusion:

This red chile glazed meatloaf is a delicious and easy-to-make dish that is perfect for a weeknight meal. The combination of ground beef and pork, along with the flavorful red chile glaze, makes this meatloaf a hit with everyone who tries it.
