Red Cabbage Salad With Feta Cheese and Olives image

This is a really morish salad, rich in flavour. It is great served with just about anything! And an all time favourite of many to whom I have served it too. Also a good salad to prepare in advance - infact it's better if it is - (the 'older' it gets, the better it gets!!!!)

RED CABBAGE, FETA & OLIVE SALAD

Red Cabbage, Feta & Olive Salad image

I had to make this salad two days in a row. When I got home from work yesterday, my husband asked me where I'd hidden the leftovers from the night before because he wanted them for lunch. Well, I'd taken them with me for MY lunch -- so I made another batch last night to go with our chili. The night before that I'd served it with shredded chicken Bobbie-Q (see my recipes) over mashed potatoes. There was a bit left over last night -- and I made sure to leave it for my husband. I brought peanut butter & a cucumber for my lunch instead. *sigh* Anyway, if you do have any of this salad left, use it by the next day.

Categories     Vegetable

Time 2h10m

Yield 4 serving(s)

Number Of Ingredients 8

1 onion, finely chopped
14 ounces red cabbage, finely sliced
5 tablespoons sunflower oil
2 tablespoons lemon juice
2 tablespoons mayonnaise
1 teaspoon mustard
1 1/2 teaspoons cumin
1 ounce walnuts, chopped

Steps:

  • Combine cabbage and onion in a large bowl.
  • In another bowl whisk together oil, lemon juice, mayonnaise, mustard and cumin.
  • Pour over cabbage mixture.
  • For best flavour allow to marinate a minimum of 2 hours before serving.
  • Garnish with chopped walnuts.

Tips:

  • Use a sharp knife to thinly slice the cabbage. This will help the cabbage absorb the dressing more easily.
  • If you don't have a mandoline, you can use a food processor to shred the cabbage. Just be careful not to over-process it, or the cabbage will become too mushy.
  • For a more flavorful salad, use a combination of red and green cabbage.
  • Be sure to rinse the olives before using them. This will remove any excess salt or brine.
  • If you don't have any feta cheese on hand, you can use another type of cheese, such as goat cheese or Parmesan cheese.
  • To make the salad ahead of time, simply prepare the dressing and chop the cabbage. Then, store the dressing and cabbage separately in the refrigerator. When you're ready to serve the salad, just combine the cabbage and dressing and toss to coat.

Conclusion:

Red cabbage salad with feta cheese and olives is a delicious and healthy side dish that's perfect for any occasion. It's easy to make and can be tailored to your own taste preferences. So next time you're looking for a quick and easy salad recipe, give this one a try!
