Time 20m

Yield 4 servings

Number Of Ingredients 10

1/4 cup lemon juice
1/4 cup orange juice
2 tablespoons clover honey
2 tablespoons Dijon mustard
1/4 cup fresh basil leaves, chopped
Salt and freshly ground black pepper
1/2 cup canola oil
2 cups thinly sliced Napa cabbage
2 cups thinly sliced red cabbage
1 large carrot, peeled and grated on the large holes of a box grater

Steps:

  • Put the lemon juice, orange juice, honey, mustard, basil and some salt and pepper in a blender and blend until smooth. With the motor running, drizzle in the canola oil until emulsified.
  • Combine the Napa cabbage, red cabbage and carrot in a large bowl; add half of the dressing and toss to coat. Season with salt and pepper, and add more dressing if needed.

Tips:

  • Use a sharp knife to thinly slice the cabbage, carrots, and radishes. This will help the slaw to be more crisp and refreshing.
  • If you don't have a mandoline, you can use a food processor to shred the cabbage and carrots. Just be careful not to over-process them, or they will become mushy.
  • The citrus dressing is what really makes this slaw shine. Be sure to use fresh citrus juice and zest. This will give the slaw a bright and tangy flavor.
  • If you want a spicier slaw, add a pinch of cayenne pepper or red pepper flakes to the dressing.
  • This slaw is best served fresh, but it can be stored in the refrigerator for up to 3 days.

Conclusion:

Red cabbage citrus slaw is a refreshing and flavorful side dish that is perfect for any occasion. It is made with a combination of red cabbage, carrots, radishes, and a tangy citrus dressing. This slaw is a great way to get your daily dose of fruits and vegetables, and it is also a delicious and healthy addition to any meal.
