Steps:
- Preheat oven to 350˚F. Melt 2 tablespoons of the butter in a large skillet set over medium. Add cabbage, celery, onions, and garlic, and cook, stirring often, until tender, 10 to 15 minutes. Transfer to a 3-quart lightly greased (with cooking spray) baking dish.
- Melt 2 tablespoons of the butter in a medium saucepan over medium; whisk in flour, and cook, whisking constantly, until smooth and thick, about 1 minute. Gradually add milk to saucepan, whisking constantly to remove any clumps. Cook, whisking constantly, until thickened and smooth, about 3 minutes. Remove from heat, and whisk in Worcestershire, salt, pepper, and 1/2 cup of the Parmesan until smooth. Pour sauce over cabbage mixture.
- Place remaining 1 tablespoon butter in microwavable bowl, and microwave on HIGH until melted, about 30 seconds. Add breadcrumbs and remaining 1/2 cup Parmesan to melted butter, and stir until combined. Sprinkle breadcrumb mixture evenly over cabbage.
- Bake in preheated oven until casserole is bubbly and breadcrumbs are golden, 20 to 25 minutes.
BRAISED RED CABBAGE WITH APPLES
This is an adaptation of a classic cabbage dish that I never tire of. The cabbage cooks for a long time, until it is very tender and sweet. I like to serve this with bulgur, or as a side dish with just about anything. You can halve the quantities if you don't want to make such a large amount.

Steps:
- Prepare the cabbage, and cover with cold water while you prepare the remaining ingredients. Heat the oil over medium heat in a large, lidded skillet or casserole, and add the onion. Cook, stirring, until just about tender, about three minutes. Add 2 tablespoons of the balsamic vinegar and cook, stirring, until the mixture is golden, about three minutes, then add the apples and stir for two to three minutes.
- Drain the cabbage and add to the pot. Toss to coat thoroughly, then stir in the allspice, another 2 tablespoons balsamic vinegar, and salt to taste. Toss together. Cover the pot, and cook over low heat for one hour, stirring from time to time. Add freshly ground pepper, taste and adjust salt, and add another tablespoon or two of balsamic vinegar as desired.

Steps:
- 1. Blanch the cabbage in boiling water. Set aside.
- 2. Insert 2 whole cloves into each of the ribs. Place the olive oil in a heavy pot over medium heat; brown the ribs, about 6 minutes per side. Remove ribs to a plate. Reduce heat to low; add the onion and cook, stirring occasionally, about 12 minutes. Return ribs to the pot.
- 3. Add reserved cabbage, tomato, apple, celery, bay leaves, vinegar, sugar, salt and pepper. Cook, partially covered, over medium heat for 15 minutes. Uncover and cook over medium-low heat, stirring occasionally, until meat is tender, about 1 to 1 1/2 hours more, making sure the meat does not stick to the bottom of the pot and the cabbage covers the meat. Serve immediately with potatoes, if desired.
RED CABBAGE CASSEROLE, VIENNESE FASHION
This is utter comfort food and yummy on a wintry day with baked potatoes and cold meats. We love the creaminess, which I'd never come across in red cabbage casserole. It comes from Nigella Lawson's How to Eat, which is full of good stuff, and she credits Arabella Boxer's Garden Cookbook, from the 1970s.

- Check the seasoning and stir in the butter until melted.
Tips:
- Use fresh red cabbage: Fresh red cabbage has a vibrant color and crisp texture that will hold up well in the casserole.
- Shred the cabbage finely: This will help it cook evenly and absorb the flavors of the other ingredients.
- Don't overcook the cabbage: Cabbage should be cooked until it is tender but still has a slight crunch.
- Use a variety of cheeses: A combination of sharp cheddar, mozzarella, and Parmesan cheese will give the casserole a rich and flavorful sauce.
- Add some bread crumbs: Bread crumbs will help to thicken the sauce and give the casserole a crispy topping.
- Bake the casserole until it is golden brown: This will ensure that the cheese is melted and bubbly and the cabbage is cooked through.
Conclusion:
Red cabbage casserole is a delicious and versatile dish that can be served as a main course or a side dish. It is also a great way to use up leftover cabbage. With its vibrant color and flavorful sauce, this casserole is sure to be a hit with your family and friends.
