AUTHENTIC LOUISIANA RED BEANS AND RICE

Authentic Louisiana Red Beans and Rice image

Authentic Cajun flavor! I grew up in Louisiana and love red beans and rice; these are just like I remember. Serve with Tabasco sauce for a little kick. My family loved to splash a little cider vinegar in each bowl.

RED BEANS & SAUSAGE JAMBALAYA

Red Beans & Sausage Jambalaya image

This recipe comes from "The Good Carb Cookbook" by Sandra Woodruff, M.S., R.D. Depending on how hot I want it, I sometimes use tomatoes w/green chiles instead of regular tomatoes. This is another one of those recipes that I can make most anytime because I usually have everything on hand.

Time 21m

Yield 4 serving(s)

Number Of Ingredients 10

cooking spray
1 cup smoked sausage, diced (about 5 ounces)
1/2 cup onion, chopped
1/2 cup celery, sliced
1 teaspoon garlic, crushed
14 1/2 ounces canned tomatoes, undrained
1 (15 ounce) can red beans, drained and rinsed
1 1/2-2 teaspoons cajun seasoning
1 1/2 teaspoons ground paprika
3 cups cooked brown rice

Steps:

  • Coat a large skillet or dutch oven with cooking spray.
  • Over medium heat, add the sausage, onions, celery, and garlic. Cook, stirring frequently, for about four minutes or until the vegetables start to soften.
  • Add the undrained tomatoes, red beans, and seasonings to the pan. Cook covered, stirring occasionally for about five minutes.
  • Stir in the rice and cook and stir for another minute or two until the rice is heated through.

Tips:

  • Mise en Place: Before you start cooking, make sure you have all your ingredients and equipment ready. This will help you stay organized and avoid scrambling during the cooking process.
  • Use Good Quality Ingredients: The quality of your ingredients will greatly impact the taste of your jambalaya. Use fresh vegetables, flavorful sausage, and a good quality chicken broth.
  • Cook the Sausage and Vegetables Properly: The sausage should be cooked until it is browned and the vegetables should be softened but still have a bit of a bite to them.
  • Use a Good Quality Rice: A long-grain rice, such as jasmine or basmati, is best for jambalaya. It will absorb the flavors of the other ingredients and cook evenly.
  • Don't Overcook the Rice: The rice should be cooked until it is tender but still has a slight bite. Overcooked rice will be mushy and ruin the texture of the jambalaya.
  • Add the Vegetables and Sausage Back to the Pot: Once the rice is cooked, add the vegetables and sausage back to the pot and stir to combine. This will help to distribute the flavors evenly throughout the dish.
  • Serve Immediately: Jambalaya is best served immediately. It can be kept warm in a slow cooker or chafing dish if necessary.

Conclusion:

Red beans and sausage jambalaya is a delicious and versatile dish that can be enjoyed by people of all ages. It is a great way to use up leftover rice and vegetables, and it can also be made with different types of sausage and beans. With a little planning and effort, you can easily make a delicious pot of jambalaya that will impress your family and friends. So next time you're looking for a hearty and flavorful meal, give red beans and sausage jambalaya a try.
