1 tablespoon olive or vegetable oil
3/4 lb smoked turkey kielbasa, cut into 1/2-inch pieces
1 cup chopped onions (1 large)
1/2 cup chopped green bell pepper (1 small)
1/2 cup chopped red bell pepper (1 small)
1/2 cup chopped celery (1 medium stalk)
2 cloves garlic, finely chopped, or 1/4 teaspoon garlic powder
2 dried bay leaves
1 teaspoon dried thyme leaves
1 can (14.5 oz) Muir Glen™ organic stewed tomatoes
1 teaspoon seasoned salt
2 cans (15 oz each) Progresso™ red kidney beans, drained, rinsed
1 cup uncooked long-grain white rice
2 cups water
Frank's™ RedHot™ Original cayenne pepper sauce

Steps:

  • In 4-quart saucepan, heat oil over medium heat. Add kielbasa, onions, bell peppers, celery, garlic, bay leaves and thyme; cook 4 to 6 minutes, stirring occasionally, until vegetables are tender.
  • Stir in tomatoes and salt. Heat to boiling. Reduce heat to low; cover and simmer 20 minutes, stirring occasionally. Stir in beans. Cover; simmer 10 minutes longer.
  • Meanwhile, cook rice in water as directed on package. Remove bay leaves from bean mixture. Serve bean mixture over rice. Serve with hot pepper sauce.

1 tablespoon dried parsley flakes
1 tablespoon dried minced onion
2 teaspoons seasoned salt
1 teaspoon ground cumin

1/2 teaspoon dried minced garlic
1/4 teaspoon cayenne pepper
1/4 teaspoon crushed red pepper flakes
2 cups dried kidney beans
1 cup uncooked long grain rice
ADDITIONAL INGREDIENTS:
4-1/2 cups water, divided
1-1/2 to 2 pounds smoked ham hocks
1 pound smoked sausage, sliced
1/2 teaspoon salt
Minced fresh parsley, optional

  • Combine the first 10 ingredients; place in an airtight container. Place beans and rice in separate containers. Yield: 1 batch., To prepare red beans and rice: Place beans in a Dutch oven or soup kettle; add water to cover by 2 in. Bring to a boil; boil for 2 minutes. Remove from the heat; cover and let stand for 1 hour., Drain. Return beans to pan; add seasoning mix, 2-1/2 cups water and ham hocks. Bring to a boil. Reduce heat; cover and simmer for 1-1/2 hours. , Remove ham hocks; cut meat into bite-size pieces and return to pan. Add the sausage. Cover and simmer for 30-40 minutes or until beans are tender and sausage is heated through. Remove bay leaf., Meanwhile, combine rice, salt and remaining water in a saucepan. Bring to a boil. Reduce heat; cover and simmer for 20 minutes or until liquid is absorbed. Remove from the heat; let stand for 5 minutes. Spoon into bowls; top with bean mixture. Garnish with parsley if desired.

1 (16 ounce) package turkey kielbasa, cut diagonally into 1/4 inch slices

1 tablespoon vegetable oil
1 medium onion, chopped
2 ribs celery, chopped
1 green bell pepper, chopped
2 cloves garlic, minced
1/2 pound smoked sausage, cut into 1/4-inch slices
1 tablespoon Neelys Dry Rub
1 teaspoon dried thyme
Salt and freshly ground black pepper
2 (12-ounce) cans red beans, drained and rinsed
3 cups chicken stock
2 bay leaves
4 cups chicken stock
2 cups long-grain rice
1 tablespoon vegetable oil
Pinch salt

Steps:

  • In a large skillet heat the vegetable oil over medium-high heat. Saute the onion, celery, green bell pepper, and garlic until tender.
