Tips:

  • Choose the right type of tomatoes: Use ripe, flavorful tomatoes for the best flavor. Roma tomatoes are a good option because they have fewer seeds and are less juicy.
  • Don't overcrowd the pan: When cooking the tomatoes, don't overcrowd the pan. This will prevent them from cooking evenly and will make them more likely to stick.
  • Use a heavy-bottomed pan: A heavy-bottomed pan will help to distribute the heat evenly and prevent the tomatoes from burning.
  • Add the spices early: Add the spices to the tomatoes early in the cooking process so that they have time to infuse the tomatoes with their flavor.
  • Cook the tomatoes until they are soft: Cook the tomatoes until they are soft and have broken down. This will help to create a smooth and flavorful sauce.
  • Add the beans last: Add the beans to the curry last so that they don't overcook and become mushy.

Conclusion:

Red bean and tomato curry is a delicious and easy-to-make dish that is perfect for a weeknight meal. It is also a great way to use up leftover tomatoes. The curry is made with a variety of spices, which give it a rich and flavorful taste. The beans add protein and fiber to the dish, making it a complete meal. Serve the curry with rice or naan bread and enjoy!
