Steps:
- Bring a medium pot of water to a boil. Spray a cookie sheet with cooking spray. Set aside.
- In a medium saucepan, bring the sugar, 1/2 cup water and corn syrup to a boil. Cook to 250 degrees F, or until the syrup spins a thread when poured from the edge of a cooking spoon. Pour in the candy pieces and continue cooking to 285 degrees F. Remove from the heat and add the food coloring to achieve the desired shade of red.
- Put the chopped nuts, coconut and candies in shallow bowls. Set aside. Wash the apples thoroughly. Remove the stems from the apples and insert a popsicle stick into the center of the bottom of each apple.
- Dip the apples quickly in the candy mixture, twisting as you dip to cover the entire apple. Roll the apples in the assorted toppings, coating the bottom half of each apple. Place on the greased cookie sheet and allow the coating to cool and harden. Remove the popsicle sticks and use an apple slicer or a sharp serrated knife to cut the apples into slices. Place a toothpick in each slice.

Steps:
- Boil water, syrup and sugar together until a brown caramel color is reached (at about 250 °F). Remove from the heat and add cinnamon and red coloring. Cool slightly. Meanwhile force a stick into the core of each apple. Dip the apples one at a time into the heavy red syrup, drain well, and place on a buttered baking sheet to cool.
CARAMEL APPLES
The caramel coating is very gooey, so refrigerate the apples for about 15 minutes, or until the caramel has firmed up. (You will need 6 wooden craft sticks for this recipe.)

Steps:
- Heat a small saucepan over high heat. Add 3 tablespoons water and the caramels and reduce the heat to low. Stir the caramels frequently until they are completely melted.

- Dip each apple into the melted caramel, making sure to get it completely coated. Put the coated apples onto a cookie sheet lined with waxed paper. Refrigerate the caramel apples for 1 to 2 minutes to harden up the caramel. Roll them in the cinnamon-crumb mixture and enjoy!

OLD-FASHIONED RED CANDIED APPLES
These are the kind you found at the circus or carnival! Not the newer version covered with cramel. ;) Candy thermometer is needed for this, as well as popsicle sticks. The number of apples needed depends on the size of the apples, probably 4 medium ones. The recipe states that each batch candies approximately 1 dozen medium apples. I'm not sure I trust that. Cook time depends on your altitude where you live, heat of your burner, and pot used. NOTE: See review by Canada Goose for helpful hints! Thanks, CG!

Steps:
- Mix 1st 3 ingredients in saucepan.
- Put on high heat with candy thermometer positioned in center of fluid level.
- While it is boiling, thoroughly wash and dry your apples, and spear with the sticks.
- Boil mixture until reaches hard crack (300ºF), then immediately add red food coloring and stir.
- Quickly immediately dip the apples, twisting to cover, and set on a greased cookie sheet.
Tips:
- Choose the right apples: Use firm, crisp apples that will hold their shape well on a stick. Some good varieties include Granny Smith, Honeycrisp, and Red Delicious.
- Prepare the apples: Wash and dry the apples thoroughly. If desired, you can peel the apples or leave the skin on. Cut the apples into 1-inch thick slices.
- Make the caramel coating: In a medium saucepan, combine the sugar, corn syrup, water, and salt. Bring to a boil over medium heat, stirring constantly. Reduce heat to low and simmer for 5 minutes, or until the mixture has thickened and turned a light golden brown.
- Dip the apples in the caramel: Carefully dip each apple slice into the hot caramel, turning to coat all sides. Allow the excess caramel to drip off.
- Add toppings: While the caramel is still wet, roll the apple slices in your favorite toppings, such as chopped nuts, sprinkles, or crushed candy canes.
- Chill the apples: Place the caramel apples on a baking sheet lined with parchment paper. Refrigerate for at least 30 minutes, or until the caramel has hardened.
