Time 1h30m

Yield 6 to 8 servings

Number Of Ingredients 16

5 cups assorted red seedless grapes, halved if large
2 tablespoons all-purpose flour
1/3 cup sugar
1 teaspoon pure vanilla extract
1/4 teaspoon pure almond extract
Juice of 1/2 lemon
Pinch of kosher salt
1 cup all-purpose flour
1/3 cup almond flour
1/3 cup sugar, plus more for sprinkling
2 teaspoons baking powder
1/2 teaspoon kosher salt
5 tablespoons cold unsalted butter, cut into cubes
1 large egg
1/2 cup heavy cream
3 tablespoons sliced almonds

Steps:

  • Make the filling: Combine the grapes, all-purpose flour, sugar, vanilla and almond extracts, lemon juice and salt in a large bowl. Toss to coat the grapes.
  • Preheat the oven to 375 degrees F. Make the topping: Whisk the all-purpose flour, almond flour, sugar, baking powder and salt in a medium bowl. Work the butter into the flour mixture with your fingers until it looks like coarse meal with pea-size bits of butter. Lightly beat the egg and heavy cream in a small bowl; add to the flour mixture and stir a few times until a sticky dough forms.
  • Spread the filling in an 8-inch square baking dish. Drop heaping tablespoonfuls of the biscuit topping over the grapes, leaving a small space between each spoonful. Sprinkle the topping with sugar and the almonds.
  • Bake until the biscuits are golden brown and puffy and the filling is bubbling, 40 to 50 minutes. Transfer to a rack and let cool at least 30 minutes before serving.

PAN ROASTED CHICKEN THIGHS WITH GRAPES AND OLIVES

Pan Roasted Chicken Thighs with Grapes and Olives image

Our chopped challenge this week was grapes. We really wanted to cook with them, but needed to figure out how to balance out their sweetness. The combo of grapes with chicken thighs and lots of salty ingredients hits the perfect salty/sweet note. Chopped Basket Ingredient: Grapes

Provided by Food Network Kitchen

Categories     main-dish

Time 40m

Yield 4 servings

Number Of Ingredients 11

8 skin-on bone-in chicken thighs (2 1/2 to 3 pounds)
Kosher salt and freshly ground black pepper
2 tablespoons canola oil
3 cloves garlic, minced
2 cups seedless red and/or green grapes
1 cup pitted kalamata olives
2 tablespoons capers in brine, drained
2 sprigs fresh oregano
1 cup dry white wine
2 tablespoons unsalted butter
2 cups quick-cooking couscous, cooked according to package, warm

Steps:

  • Sprinkle the chicken liberally with salt and pepper. Heat the canola oil in a large, ovenproof high-sided skillet over medium-high heat until it shimmers. Sear the chicken, skin-side down, until golden brown, 3 to 4 minutes. Then flip and brown the other side, 3 to 4 minutes. You may need to do this in two batches to avoid crowding the skillet. Transfer the browned chicken and any juices to a baking sheet or large plate.
  • Lower the heat to medium and add the garlic, 1 cup of the grapes, the olives, capers, oregano, wine and 1/2 cup water. Stir to combine and cook until the liquid has reduced by half, 6 to 8 minutes. Stir in the butter. Add the chicken and any juices back to the skillet, skin-side-up. Sprinkle the remaining grapes around the chicken. Continue cooking over medium heat until the internal temperature reaches 160 degrees F, 6 to 8 minutes.
  • Set the oven to broil with a rack set about 4 inches from the broiler.
  • Place the skillet underneath the broiler to crisp the chicken skin, about 2 minutes. Watch carefully to avoid burning.
  • To serve, divide the warm couscous among 4 plates and top each plate with 2 of the chicken thighs and a large spoonful of the sauce.

This is a wonderful dessert salad that never failed to be a hit. Made the day before the brown sugar makes the sauce taste like caramel. You can use less brown sugar, if you wish.

My daughter follows a restricted diet and told me that I nailed it with this dairy-free berry crumble recipe. I combined grapes from my garden with blueberries and strawberries, and used gluten-free flour and coconut oil. We had eaten nearly the whole pan when I realized I'd better write down the recipe. -Kallee Krong-McCreery, Escondido, California

Yield Makes 10 to 12 servings

Number Of Ingredients 16

For filling:
6 lb seedless grapes (preferably a mix of red and green; 4 quarts)
3/4 cup granulated sugar
1/4 cup fresh lemon juice
1 teaspoon cinnamon
1/4 cup Cognac or other brandy
3 tablespoons cornstarch
For topping:
3/4 cup all-purpose flour
3/4 cup packed light brown sugar
3/4 cup old-fashioned rolled oats
1 stick (1/2 cup) cold unsalted butter, cut into bits
1/4 teaspoon cinnamon
1/4 teaspoon salt
1 cup coarsely chopped pecans
Accompaniment: crème fraîche, vanilla ice cream, or lightly sweetened whipped cream

Steps:

  • Make filling:
  • Toss grapes with sugar, lemon juice, and cinnamon in a wide 6- to 8-quart heavy pot. Bring to a boil, covered, over moderate heat, stirring occasionally. Continue to boil, covered, stirring occasionally, until grapes begin to burst, 20 to 30 minutes.
  • Transfer grapes with a slotted spoon to a colander set over a bowl and drain 15 minutes, then return juices in bowl to pot.
  • Preheat oven to 425°F. Boil juices, uncovered, until syrupy and reduced to about 2 cups, 20 to 25 minutes.
  • Stir together Cognac and cornstarch until smooth and whisk into grape syrup. Boil, whisking constantly, 1 minute. Stir grapes into syrup, then spoon filling into a 3-quart shallow baking or gratin dish.
  • Make topping while juices are reducing:
  • Pulse together flour, brown sugar, oats, butter, cinnamon, and salt in a food processor until mixture resembles coarse meal. Transfer to a bowl and stir in pecans.
  • Bake crisp:
  • Sprinkle topping evenly over filling and bake in middle of oven until topping is golden brown and filling is bubbling, about 20 minutes.

Tips:

  • Choose the right grapes. Use a combination of red and green grapes for a beautiful and flavorful crisp. Choose grapes that are ripe and plump, with no signs of damage or bruising.
  • Prepare the grapes properly. Wash the grapes thoroughly and remove any stems. If you are using large grapes, cut them in half or quarters. This will help them cook evenly.
  • Use a good quality butter. The butter will help to create a golden brown crust on the crisp. Use unsalted butter so that you can control the amount of salt in the recipe.
  • Don't overmix the topping. You want the topping to be crumbly, so don't overmix it. Mix the ingredients together until they are just combined.
  • Bake the crisp until it is golden brown. The crisp is done baking when the topping is golden brown and the filling is bubbling. This usually takes about 45 minutes.

Conclusion:

Red and Green Grape Crisp is a delicious and easy-to-make dessert that is perfect for any occasion. The combination of sweet and tart grapes, crunchy topping, and creamy vanilla ice cream is irresistible. Follow these tips to make the best Red and Green Grape Crisp:
  • Use a combination of red and green grapes.
