Steps:
- Cook zucchini in 1/2 cup water until tender. Drain and set aside. Heat oil in saute pan. Add corn, onion and green pepper. Saute until tender but not brown. Add to zucchini Add salt, pepper, oregano and cheese. Stir in beaten egg. Transfer to a buttered casserole dish. Sprinkle breadcrumbs on top. Bake in 350 degree oven until knife in center comes out clean, appx 45 mins. Let set 15 mins before serving.
