These roll-ups are so versatile! You can use different types of pesto, goat cheese, and vegetables. I've even made them with sun-dried tomatoes and artichoke hearts.

I'm not sure what I did wrong, but my roll-ups didn't turn out very well. The zucchini was too soft and the pesto was too runny.

These roll-ups are a great way to use up leftover zucchini. I always have a bunch of zucchini in my garden, so I'm always looking for new ways to use it.

I had a hard time finding zucchini that was the right size for these roll-ups. I ended up having to cut them in half lengthwise, which made them a bit too thin.

These roll-ups were a bit too oily for my taste, but they were still good.

I'm not a big fan of zucchini, but I loved these roll-ups! The pesto and goat cheese really masked the taste of the zucchini.

I made these roll-ups for dinner last night and they were so easy to make! I used store-bought pesto and goat cheese, and they still turned out great.
