Zucchini Onion Pie image

Great zucchini recipe.

Number Of Ingredients 10

3 eggs
1 c grated parmesan cheese
1/2 c canola oil
1 Tbsp minced fresh parsley
1 clove garlic minced
1/4 tsp salt
1/8 tsp pepper
3 c sliced zucchini
1 c biscuit/baking mix
1 small onion, diced

Steps:

  • 1. In a large bowl, whisk the first seven ingredients.
  • 2. Stir in the zucchini, baking mix and onion. Pour into a greased 9" deep pie plate.
  • 3. Bake at 350 degrees for 25-35 minutes or until lightly browned.
