Steps:
- Beat eggs.
- Add oil, sugar, zucchini, and vanilla.
- Mix lightly but well.
- Add other ingredients.
- Beat well.
- Bake in greased loaf pans at 325 for 1 hour.
- Yields 2 loaves.
- Freezes well.
