Zucchini Hash image

Number Of Ingredients 7

1 tablespoon extra-virgin olive oil
1 tablespoon butter
1/2 pound zucchini, cubed
1/2 pound yellow squash, cubed
1/2 red onion, diced
1/4 cup chives, cut into 1/2-inch pieces
Salt and freshly ground pepper

Steps:

  • In a large skillet, heat oil and butter over high heat. Add zucchini, squash and onion. Cook until softened and golden, about 10 minutes. Remove from heat and mix in chives. Season with salt and freshly ground black pepper, to taste.
