3 c grated zucchini (washed and skin on)
1 small or 1/2 large onion, grated
1 clove garlic, minced
2 c Bisquick or cake flour
1/2 c vegetable oil
1/4 c grated Parmesan cheese
1/4 tsp salt and pepper
2 Tbsp dried parsley
4 eggs, mixed separately

Steps:

  • 1. Mix the following together in a large mixing bowl - grated zucchini, grated onion, minced garlic, 1/2 cup vegetable oil, salt, pepper, parsley, and grated cheese.
  • 2. Mix 4 eggs in a separate bowl. Add eggs and mix together with the above ingredients.
  • 3. Finally, add 2 cups of Bisquick. Mix until well blended.
  • 4. Pour into a well-greased 9x13 baking dish. (I pour about 2 Tbsp of vegetable oil on the bottom of the pan.)
  • 5. Bake in a 350 oven for 35 to 45 mins until the top is browned.
  • 6. Cool 15 minutes before cutting. Enjoy!

These zucchini fingers were a hit with my family! They were crispy on the outside and tender on the inside. I used panko breadcrumbs instead of regular breadcrumbs and they turned out perfectly. Definitely a keeper recipe!
