ZUCCHINI CASSEROLE image

When my sons were little I tried to get them to eat zucchini. I never was successful until I come across this one from an amish friend. I could eat this whole casserole myself!

Number Of Ingredients 8

1 c chopped onion
1 can(s) cream of chicken soup undiluted
1 16 oz. cream cheese room temp
1/2 c milk
1/2 stick butter
4 zucchini sliced
2 boxes chicken flavored stuffing mix
the amount of water suggested on the boxes of stuffing

Steps:

  • 1. In large pot, put the amount of water suggested on the two boxes of stuffing mix. Add onions and butter. Bring to boil. Lower heat and Add cream cheese and stir until melted. Add chicken soup and milk. Stir until well blended. Add stuffing mix and stir. Add zuchini and stir together. Pour into a greased lasagna pan (bigger than a 9x13). Bake in preheated 350 degree oven for 50 minutes, covered.
