Zucchini Appetizers image

Our son and his wife are vegetarians so I am always challenged to come up with new things for them. I made these as an appetizer and everyone loved them. They freeze well also and are wonderful for breakfast.

Number Of Ingredients 11

3 c thinly sliced uncooked zucchini (about 4 small)
1 c bisquick baking mix
1/2 c finely chopped onion
1/2 c grated parmesan cheese
2 Tbsp parsley flakes or fresh snipped
1/2 tsp salt
1/2 tsp oregano, dried
1 clove garlic finely chopped
1/2 c vegetable oil
4 eggs, slightly beaten
dash of pepper

Steps:

  • 1. preheat oven to 350 degrees. Grease 13X9 pan. Mix all ingredients, spread in pan.
  • 2. Bake until golden brown, about 25 minutes. Cut into pieces. Enjoy!
