Zoodles (Zucchini Noodles) image

If you're looking to cut back on pasta, serve zucchini noodles! It's a way to enjoy a lower carb spaghetti night. The noodles have a lovely, slightly crunchy texture. Serve with your favorite pasta sauce, with a little olive oil, or melted butter. Yum!

1-3 zucchini, julienned
2 Tbsp olive oil
1/2 tsp garlic, minced

Steps:

  • 1. Cut up several large zucchini into long strips (I use my julienne peeler).
  • 2. You can even peel off the green skin for a more authentic looking "noodle".
  • 3. Saute them quickly in a bit of olive oil, salt, and minced garlic. Toss until tender. Remove from pan and place in serving dish.
  • 4. Top with your favorite pasta sauce and ENJOY!
