Steps:
- 1. Cut up several large zucchini into long strips (I use my julienne peeler).
- 2. You can even peel off the green skin for a more authentic looking "noodle".
- 3. Saute them quickly in a bit of olive oil, salt, and minced garlic. Toss until tender. Remove from pan and place in serving dish.
- 4. Top with your favorite pasta sauce and ENJOY!
