Zippy Tuna Melts image

My girlfriend lives on tuna fish for lunch! lol I know her 40 years, and that is literally all she eats. She came over yesterday, and I surprised her with this sandwich. It was so flavorful, and delicious. I hope you give it a try. My photos and recipe.

Number Of Ingredients 12

6 Tbsp mayonnaise
2 can(s) 6oz each solid white tuna, drained
1/4 c finely chopped celery
2 scallions, finely chopped
2 Tbsp chopped parsley (i used dried)
2 tsp apple cider vinegar
1 Tbsp whole grain mustard
1 Tbsp prepared horseradish
4 slice rye bread, lightly toasted
4 slice lacey swiss cheese (or your choice of cheese)
2 tomatoes, sliced (i used grape tomatoes, what i had)
salt and pepper to taste

Steps:

  • 1. Pre heat oven to broil. Combine 4 tablespoons mayonnaise, tuna, celery, scallions, parsley, and vinegar in a bowl. Season with salt and pepper. Set aside.
  • 2. Combine remaining 2 tablespoons mayonnaise with the mustard and horseradish in a bowl. Lightly toast rye bread and spread mixture on the slices. Arrange on a baking sheet.
  • 3. Mound the tuna mixture on top of horseradish. Top the tuna with tomatoes and a slice of cheese. Place baking sheet under broiler, just until cheese is melted. Don't let it burn. Serve with pickles, chips, etc. Enjoy!

I'm not a huge fan of tuna salad, but these tuna melts were surprisingly good. The bread was perfectly toasted and the cheese was melted and gooey.

I've made tuna melts before, but this recipe is by far the best. The addition of Dijon mustard and Worcestershire sauce really takes it to the next level.
