Yo Ho Ho Apple Cake image

September 19th is International Talk Like a Pirate Day invented by my friend, Mark Summers (aka Cap'n Slappy) and another friend of his. I thought a little rum took this apple cake to the next level.Yo Ho Ho and a Bottle of Rum. Arrrrrrr!

FOR THE CAKE
1 c white sugar
1 c brown sugar
1/2 c butter, softened
1 Tbsp rum
1 tsp vanilla
2 large eggs
1 c buttermilk or sour milk
2 1/2 c flour
1 tsp soda
1/2 tsp salt
2 tsp cinnamon
3 to 4 c peeled, cored and chopped apples
FOR THE TOPPING
1/4 c chilled butter
1/4 c brown sugar
1/4 c flour
1/4 c oatmeal

Steps:

  • 1. Heat oven to 350 degrees. Mix sugars, butter, eggs, rum and vanilla together until well combined. Mix together the dry ingredients in a separate bowl
  • 2. Starting with the dry ingredients add 1/3 of the dry ingredients and mix until blended with the sugar/butter mixture. Add 1/2 the buttermilk until mixed in and stop the blender and scrape the bowl. Add 1/3 of the dry ingredients and then the other 1/2 of the buttermilk and the last of dry ingredients blending well in between each addition. Add chopped apples and stir in by hand. Pour into a greased 9x13 pan.
  • 3. For the topping, cut the butter into the sugar, flour and oatmeal with a pastry blender. Sprinkle on top of the cake batter. Bake at 350 degrees for 45 minutes. Serve warm with whipping cream.
