Yellow Squash Souffle image

this is a great way to fix squash it is one of the best recipes my grand mother gave me

Number Of Ingredients 7

2 lb yellow squash, sliced, cooked and mashed
2 medium eggs
1 c milk
1 tsp salt
1/2 tsp pepper
1 Tbsp butter, melted
1/2 c saltine cracker crumbs

Steps:

  • 1. combine everything except cracker crumbs. pour in greased 2 quart casserole. top with cracker crumbs. bake 40-50 minutes at 350 until the middle of the souffle is set.
