2-3 tablespoons olive oil
1/2 head cabbage
1 c celery,diced
1 white or brown onion,diced
1 green bell pepper,diced
1 c carrots,diced
2-3 cloves garlic,minced
4 c chicken broth
14 ox can diced tomatoes
1 t. dried oregano
1 t, dried basil
1/2 t. red pepper flakes and cayenne
salt and pepper,to taste

Steps:

  • 1. Heat 2-3 tablespoons of olive oil in a large pot over medium heat. Add celery, onions, bell peppers, and carrots. Saute until slightly tender. Stir in garlic. Pour in chicken broth. Stir in tomatoes and cabbage. Bring to a boil and then reduce heat. Cook until cabbage is tender. Stir in oregano, basil, red pepper flakes, black pepper and salt (if using) Taste broth and adjust seasoning if needed.
  • 2. My Changes: I add 5 cloves garlic and used 8 c chicken broth. Also I think the soup tastes better if the vegetables are just tender, not over cooked.I did not have can tomatoes so I just added 3 diced Roma tomatoes.

I'm not a huge fan of cabbage, but I actually really liked this soup. The cabbage is very mild, and the other ingredients really balance it out.
