Wild Rice Pancakes image

Number Of Ingredients 8

1 1/2 cups unbleached flour
2 teaspoons baking powder
Salt to taste
1 tablespoon sugar
1 cup milk
2 eggs, lightly beaten
2 tablespoons melted butter
1 cup cooked wild rice (about 1/4 cup uncooked)

Steps:

  • Blend the flour, baking powder, salt and sugar.
  • Stir in milk, eggs and melted butter just until ingredients are blended. Stir in cooked rice.
  • Cook pancakes until they are brown on both sides. Serve with maple syrup.
