WILD RICE & ORZO SALAD image

Number Of Ingredients 13

• 1 Cup Cooked wild rice
• 1 Cup Cooked orzo or farro
• 1/3 Red Pepper, chopped ( or even roasted)
• 1/2 Cup Black olives- sliced
• 1/2 Cup Sun-dried tomatoes - chopped
• 2 Tbsp Capers
• 1/3 Cup Olive oil or Garlic Olive Oil
• 1/3 Cup Aged Balsamic Vinegar
• 2 Tbsp Fresh Basil - chopped
• 1 Tbsp Scallions-chopped
• 2 Cloves Garlic (Minced)
• Salt & Pepper - to taste
•1/4 Cup Pignoli Nuts, roasted

Steps:

  • • In a large bowl, combine all ingredients except pignoli nuts. Mix well to cover all with dressing. Cover and marinate 4 hours (overnight OK) . Add pignoli nuts before serving. • Serves 8 as a side dish
