Wild Rice Barley Salad image

I like this chilled salad because it's out of the ordinary. The rice is tossed with barley, green pepper, olives and cranberries, then coated with a tangy vinaigrette. -Mared Metzger Beling, Eagle River, Alaska

I found this salad to be too dry. I think it would have been better with a bit more dressing.

This salad was just okay. The flavors were a bit bland for my taste. I think it would have been better if I had used a more flavorful dressing. Otherwise, the salad was easy to make and the ingredients were all fresh.
