Time 1h5m

Yield 8 servings

Number Of Ingredients 12

1/2 cup apple cider vinegar
3 tablespoons brown sugar
3 tablespoons finely chopped fresh cilantro leaves
2 tablespoons finely chopped fresh parsley leaves
1 cup vegetable oil
3 3/4 cups water
1/2 cup wild rice
1 cup white rice
1 red onion, peeled and diced small
1/2 fresh pineapple, peeled, cored, and diced medium
Salt and freshly ground black pepper
8 small fresh cilantro sprigs, for garnish

Steps:

  • Prepare dressing by whisking together vinegar, brown sugar, cilantro, and parsley in a bowl. Add oil in a thin stream while whisking constantly. Set aside to let flavors integrate.
  • Bring 3 3/4 cups water to a boil. Stir in wild rice, cover pot and let cook undisturbed for 15 minutes. Add white rice to the same pot and cook covered for another 20 minutes. Remove from heat and let sit covered for another 5 minutes to let rice absorb water, then remove lid, stir to fluff rice and let cool.
  • Combine onion and pineapple in a bowl and stir in cooled rice. Add dressing and stir to coat. Season with salt and pepper, as needed. Transfer to a serving bowl and garnish with cilantro sprigs.

This salad is a good way to use up leftover pineapple. It's also a healthy and refreshing dish that's perfect for summer.

This salad is okay. It's not amazing, but it's not bad either. I probably wouldn't make it again.

I would not recommend this salad. It's not very good and it's not worth the time or money.

This salad is not worth the effort. It's not very flavorful and the ingredients don't really go together.

I found this salad to be a bit bland. I think it needed more seasoning or a more flavorful dressing.

This salad was a little too sweet for my taste. I think I would have preferred it with less pineapple or a different type of dressing.

I love the combination of flavors in this salad. The wild rice is nutty and chewy, the pineapple is sweet and juicy, and the red onion is sharp and tangy. The dressing ties it all together perfectly.

I've made this salad twice now and it's always a crowd-pleaser. The dressing is so flavorful and the pineapple adds a nice touch of sweetness.

This salad was a hit at my summer BBQ! The flavors of pineapple, red onion, and wild rice paired perfectly. I added some grilled chicken for a protein boost.
