Whole Wheat Banana Muffins (Healthy!) image

These muffins are a healthy option because of the wheat flour and flax seed. The sugar could probably be reduced further, if desired, but I haven't tried to do that yet. If you don't want to use the wheat flour, just use 1 1/2 cups all-purpose flour. I add some quick oats to the topping, for presentation. Also good in a mini-muffin pan!

Time 30m

Yield 12 muffins, 12 serving(s)

Number Of Ingredients 18

1 cup whole wheat flour
1/2 cup all-purpose flour
1/4 cup ground flax seeds
1 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon salt
1/4 teaspoon cinnamon
1/4 teaspoon nutmeg (optional)
3 large very ripe bananas
1/2 cup brown sugar
1 egg, beaten (vegan egg replacer works too)
1/3 cup butter, melted (Earth Balance Vegan Buttery Sticks work too)
1/3 cup brown sugar
2 tablespoons flour
1 tablespoon butter, cold, cubed
1/4 teaspoon cinnamon
2 tablespoons quick oats, uncooked (optional)
1 tablespoon ground flax seeds (optional)

Steps:

  • Preheat oven to 375 degrees. Grease muffin pan or use muffin papers.
  • Mix up the flours, flax, baking soda, baking powder, salt and cinnamon in a large bowl.
  • In a smaller bowl, mash bananas. Add sugar, egg and melted butter to bananas.
  • Add banana mixture to flour mixture and stir.
  • Divide mixture evenly into muffin cups, filling each about 3/4 full.
  • Prepare streusel topping. Sprinkle onto tops of muffins and lightly press struesel into batter (so it will stay in place as muffin rises).
  • Bake at 375 degrees for about 20 minutes. They should pass the toothpick (or knife) test.

These muffins are okay. They're not bad, but they're not great either. I probably wouldn't make them again.

I'm not a big fan of banana muffins, but these are actually pretty good. The banana flavor is subtle, and the muffins are moist and fluffy.

These muffins are good, but they're not as good as my grandma's. Her recipe is a secret, though, so I guess I'll have to keep searching for the perfect muffin recipe.

I followed the recipe exactly, but my muffins didn't turn out as fluffy as I expected. Maybe I overmixed the batter?

These muffins are a bit dry for my taste. I think they could use a little more moisture.

I was looking for a healthier muffin recipe, and these definitely fit the bill. They're made with whole wheat flour, and they don't have any added sugar. But they're still really tasty.

These muffins are so easy to make. I love that I can just mix everything together in one bowl. And they bake up in no time.

These muffins turned out amazing! They're so moist and fluffy, and the banana flavor is perfect. I love that they're made with whole wheat flour, too. They're a healthier option than traditional muffins, but they still taste delicious.
