White Fish Soup image

Very good and very easy to make. Gluten and dairy free.

2 tablespoons vegetable oil
1 onion, finely diced
1 green bell pepper, chopped
1 rib celery, thinly sliced
1 (14 ounce) can chopped tomatoes
3 cups chicken broth, or more to taste
¼ cup chopped fresh parsley
1 ½ pounds cod, cut into 3/4-inch cubes
salt and pepper to taste
1 dash red pepper flakes

Steps:

  • Heat oil in a soup pot over medium heat. Add onion, bell pepper, and celery and cook until wilted, about 5 minutes. Add tomatoes and broth and bring to a simmer, about 5 minutes. Cook 15 to 20 minutes. Add cod, parsley, and red pepper flakes and simmer until fish flakes easily with a fork, 8 to 10 minutes more. Season with salt and black pepper.
