This quick and easy recipe has all the flavor of a chili that traditionaly simmers all day! My White Bean Chicken chili is a great alternative to the tomato and beef based chili.

Steps:
- 1. Prep: Finally chop 1 medium white onion and cut cooked chicken into bite size cubes (a prepared rotiseri chicken works great as well). Open, drain and rinse the canned beans.
- 2. In a dutch oven or deep pot over medium-high add the olive oil and saute the onion, chilies, oregano, cumin and red pepper flakes 5 minutes until softened and incorporated. Reduce heat and add the broth, beans, cream and heavy whipping cream. Simmer for 20 minutes and serve hot with crusty bread.
