Wheat Berry Salad With Apples, Cranberries and Mint image

I love wheat berries and am posting a few recipes from books, websites and friends on Zaar for everyone's use. This one came from "everyday food storage" website. This is my version. Plan ahead, wheat berries must soak overnight and this time is not included with the prep or cooking time in the recipe.

Number Of Ingredients 12

1 1/2 cups wheat berries
8 cups water
3 tablespoons vegetable oil
1/2 cup orange juice
2 tablespoons red wine vinegar
2 teaspoons ground coriander
1/2 teaspoon ground cinnamon
2 diced granny smith apples
2 tablespoons chopped mint
1 minced shallot or green onion
1 cup dried cranberries
1/2 cup crumbled feta (optional)

Steps:

  • Cover the wheat berries with water and soak overnight.
  • The next day place the wheat berries with 8 cups of water in a large saucepan.
  • Bring to a boil, reduce heat and simmer for about 1 to 1 1/2 hours or until tender, uncovered.
  • Drain and refrigerate until completely cooled.
  • Combine wheat berries with apples, mint, shallot, cranberries.
  • Whisk together oil, orange juice, vinegar, coriander, and cinnamon.
  • Pour over wheat berry salad, stir to combine.
  • Top with feta if using.
  • Serve.
