1/2 cup extra-virgin olive oil
1 small fennel bulb, cut into 1/4-inch dice
4 medium cucumbers, peeled, seeded, and cut into 1/4-inch dice

6 scallions, thinly sliced (about 1 cup)
1/3 cup chopped fresh flat-leaf parsley

This salad was a bit too sweet for my taste. I think I would have preferred a more savory dressing.

I'm not a huge fan of wheat berries, but I thought this salad was pretty good. The dressing was light and flavorful, and the other ingredients helped to balance out the flavor of the wheat berries.

The wheat berries took a long time to cook, but they were worth the wait. They were chewy and flavorful, and they held up well in the salad.

This salad was a bit too bland for my taste. I think it could have used more dressing or some additional spices.
