Wenatchee Salad (Like a Waldorf) image

The Wenatchee Valley is in the central part of Washington state and is the apple and pear capital of the Northwest. Cook time is chilling time. You could leave the chicken out and add more apple for a vegetarian version. THE COOK TIME IS REFRIGERATION TIME.

Time 2h20m

Number Of Ingredients 14

1 qt cold water
1 tsp fresh lemon juice
2 medium red apples, unpeeled (cored and diced)
2 medium granny smith apples, unpeeled (cored and diced)
1 medium pear, unpeeled (firm green or red, cored and diced)
3 c cooked chicken, diced
1 c celery, thinly sliced
3/4 c walnuts, coarsely chopped (or pecans)
1/2 c dried cranberries (craisins)
1 c mayonnaise
1/2 c sour cream
2 Tbsp fresh lemon juice
2 Tbsp fresh parsley, finely chopped
lettuce, for serving

Steps:

  • 1. Pour the cold water into a medium bowl, and mix in the 1 teaspoon of lemon juice. Add the diced fruit and allow to stand briefly. This keeps the fruit from browning.
  • 2. In a large bowl, mix the chicken, celery, walnuts and dried cranberries.
  • 3. Drain and add the diced apples, mixing well.
  • 4. In a small bowl, whisk together mayonnaise, sour cream, 2 tablespoons lemon juice and parsley.
  • 5. Add to the chicken mixture and gently toss to coat.
  • 6. Cover bowl with plastic wrap and chill thoroughly before serving.
  • 7. To serve place some lettuce leaves on each plate on top with salad.

This salad is a waste of time. The flavors just don't work together.

The salad was good, but it didn't wow me. I think I would have preferred a more traditional Waldorf salad.

The salad was okay, but I found it to be a bit bland. I would have liked more flavor from the dressing.

This salad is a bit too sweet for my taste. I would recommend using less sugar in the dressing.

I'm not a huge fan of mayonnaise-based salads, but this one is an exception. It's so light and flavorful!

Not a fan of walnuts, so I used pecans instead. Still turned out great!

This salad is a great way to use up leftover chicken or turkey. I also added some chopped celery and it was a perfect addition.

Easy to make and absolutely delicious. I used a mix of red and green grapes and added a bit of crumbled blue cheese. Yum!

I was skeptical about the combination of apples, grapes, and walnuts, but I'm so glad I tried it! The flavors and textures all came together beautifully. This salad is now a regular in our dinner rotation.

This salad was a delightful surprise! I've made Waldorf salad many times, but the addition of apples, grapes, and walnuts gave it a whole new dimension of flavor and texture. My family loved it!
