Weight Watchers Creole Chicken Thighs - 6 Points Recipe - (3.9/5) image

Number Of Ingredients 6

1/2 teaspoon Creole seasoning
1 1/2 pounds skinless, boneless chicken thighs
2 teaspoons canola oil
1/2 cup frozen cut okra
1/2 teaspoon chopped fresh thyme
1 (14.5 ounce) can stewed tomatoes, undrained and chopped

Steps:

  • 1. Rub Creole seasoning evenly over chicken.. 2. Heat oil in a large nonstick skillet over medium-high heat. Add chicken; cook 2 minutes. Turn chicken over: Stir in okra, thyme, and tomatoes. Bring to a boil; cover, reduce heat, and simmer 10 minutes. Uncover and cook 2 minutes or until liquid is reduced by half. Serving size: about 2 chicken thighs and 1/2 cup tomato mixture. Suggest serve with Dirty Rice. PointsPlus = 6
